Oven Baked Pork Ribs


Today has felt like hell. I am seriously being tested on my patience and it officially sucks. I am not ready for children. First thing this morning I let the dogs out to go potty and got them their breakfast in their bowls accordingly. Rogue comes in and poops ALL over the living room carpet. I almost took a picture because of the artwork he designed but then realized that was gross. So cleaned that up, the dogs ate, well more like Rogue ate his and Ollie's food, then headed to the store. I took Rogue with me because I am trying to train him to ride in the car. So we went to Dutch Bros and grabbed Scott and myself a coffee. Dropped that off and headed home. I'll go ahead and add that Rogue has been whining all morning for no reason. Get home and have to get him out of the car, as I am doing this he whips himself across my lap and my americano is now being worn on my WHITE lululemon jacket. Nice, you could say I was happy. NOT. So then we get in the house and he wants on the couch. His tactic for this is to climb up on the end table over the remotes and the remains of my coffee, that are now on the carpet. Awesome. So I threw a fit, got mad, grunted, ya know the whole works. Thankfully the windows were closed and I was the only one home cause it would have been embarrassing to have had a audience for that fit. So short story long, that was my morning.

I am better now. I took some deep breaths and had a photo shoot with the pups. Well two of them anyhow, cause they were cuddling and it was adorable.

 
 
I also made some chocolate protein balls with Progenex Loca Mocha flavor. Yep. I will post the recipe next week. They are yummers!

So I made these ribs for my mom's birthday the other night. They turned out AWESOME and super tender, fall off the bone kind of delicious. You know what I am talking about.

Oven Baked Pork Ribs

4 lbs pork short ribs
1 6oz can tomato paste
3 tbsp minced garlic
1 yellow onion diced
1/4 cup red wine
2 tbsp apple cider vinegar
2 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
2 tbsp coconut aminos
1 tsp red chili flakes
1/4 cup raw honey
1 tbsp bacon grease

Preheat oven to 275F



Get out a large skillet and heat bacon fat to medium and sear the ribs on each side till light brown. Add to a large baking dish and lay flat, no overlay. In a medium saucepan put all remaining ingredients in and heat up stirring frequently to get the flavors to come out. Pour 3/4 of this sauce over ribs and put in oven to bake for 4 hours. Every 30 minutes or so flip ribs to get optimum tenderness. When your timer goes off take the ribs out of the oven and turn oven to broil. drain the fat and sauce and spread remaining sauce on top and broil the ribs for 10 minutes.

Let cool and eat up!
