Let me just get something off of my chest. Other then CrossFit, I DON'T CARE ABOUT SPORTS (particularly professional baseball, basketball, hockey, football etc.). Unless I know something playing in the game, or am at the game live, or its kids playing (which is awesome to watch and hear about), I truly do not give a poo about it. When people talk to me about plays and this team doing that and that team doing this, I literally don't know what your talking about (you might as well be talking to a wall because I know nothing) nor do I care. I am sorry, maybe if I understood the games I would like it.
Rogue makes me laugh. I am sitting here trying to type this and he thinks my hands are a game or something. He keeps pawing at them, adorable. Some kids commercial came on with their high pitch voices and he started watching the TV too. Doing that huh? head tilt. Can you tell I am obsessed?! Okay sorry, I am a freak. Didn't mean to scare you guys. Sheesh.

I have a date today too. With my dearest friend Annie Hyde. At 4:30pm. Can't wait! I haven't worked out with her for EVER. Seriously like 2 months. So stupid. But we are ending that streak and getting beast mode today! Yeeeaaahhh!! Especially after watching the Reebok CrossFit Games last night on ESPN2. It was the women's chipper. So intense! Those ladies are amazing.
So I made these bars last week when I was sick cause I was craving something sweet. I shared one with my friends, the Dunkins, and yesterday when I was hanging out with the kids I made them a batch for their lunches. MMM. So good. I will say that they are much easier to make with a food processor and they hold up better that way too. But whatever way you make them, they taste heavenly.
Apple Pie Bars
Crust
12 medjool dates, pits removed
1/2 cup walnuts
1 cup almond butter
1/2 cup shredded coconut
2 tbsp raw honey
1 tsp cinnamon
Topping
3 apples, cored and thinly sliced
3 tablespoons coconut oil
1/2 cup walnuts, roughly chopped
1/4 cup raw honey
1 tsp cinnamon
pinch of salt
First you need to make your crust. Add all ingredients for the crust to a food processor. Turn on until it gets sticky an pliable. Put crust ingredients in an 8×8 glass baking dish or something close to that and press down evenly.
Now heat up a large pan add your coconut oil and your sliced apples. Cook for just a few minutes then add your walnuts, honey, cinnamon and salt. Once these are mixed together pour onto crust and put in fridge for about an hour until cold and firm.
Cut yourself a little square or rectangle and eat! Or slice and wrap individually for lunches. Whatevers clever.
