Fish Taco Salad

What an awesome weekend we had! Man! Everyone did so great in the Warrior Dash. Check out the photos on our gyms FB page if you'd like! http://www.facebook.com/crossfitgp They are pretty great. Just a bunch of muddy people with "Don't mess with me" faces going on. So then we went to dinner downtown Portland at El Gaucho. Of course everyone went and showered first cause they were covered in poo. So dinner was fabulous, I did not eat completely paleo, but when in Rome right? That's right! ;) Then we went to The Departure and had some drinks and chatted the night away. Good times, really.

So yesterday was Scott's 33rd birthday. My old man! Ha! Just kidding. We didn't do anything special. Mainly just relaxed around the house and made dinner. I made him some REAL oatmeal cookies, organic of course.

OH WAIT! Yesterday I went to the gym. My first WOD in 3 weeks! Thank you Jesus! Such a fun wod for my first one back too. Clearly I kept it light, and when I say light, I mean LIGHT. 25# baby! This was the wod...

Barbell Tabata
Do 4 rounds of 20s work, 10s rest of each of the following movements. Prescribed weights are 115/95. Record total number of reps for each movement.
Power Snatch
Push Jerk
Front Squat
Back Squat
Hang Squat Clean
This should equate to 10 total minutes, 2 minutes or 4 cycles of each exercise.

So I just really focused on keeping my form tight and not hurting my hip. And I think I did a pretty good job. My squat felt retarded though. Not sure why, maybe cause I only had 25# going on. I don't know.  But the thing is, it felt AMAZING to workout again and get my booty back in there.

So I asked Scott what he wanted for his birthday dinner and he wanted fish taco salad. This is one of my favorite recipes, and frankly I am really confused as to why its not on my blog already. Past is the past, here it is now.

Fish Taco Salad

Fish

1 lb cod or tilapia
1 tsp paprika
1 tsp cumin
1/4 red chili flakes
salt & pepper to taste


In a frying pan put about a tbsp of olive oil and bring to a medium heat. Cut your fish into bite size cubes. Add your fish and spices and cook for about 8-10 minutes until it start to flake. Careful, its fragile.

Salad

1/2 head green cabbage sliced thinly
1 head of romaine chopped thinly
1 red onion thinly sliced
1/2 cucumber sliced
1 mango chopped

Combine all the salad ingredients and toss in a bowl for consumption.


Avo Cilantro Cream

2 avocados
2 limes, juice only
1 head of cilantro, stems removed
1 tsp garlic powder
1/2 cumin
dash of red chili peppers
salt & pepper to taste

In your food processor combine all ingredients till you get a smooth cream. If its too thick add a little bit of olive oil. This is your topping and its amazing!

Finally, put some salad on your plate. Top that with some fish, then add a dollop of the avocado cream. If you want to get extra crazy add some fresh pico de gallo salsa. Wahhhbammm! This is like a fish version of Chipolte but better. No joke.
