Tilapia with Roasted Red Pepper Sauce and Veggies

Coconut milk creamer is fabulous. Even better, hazelnut flavored coconut milk creamer. Heck yes. And it only has 4 grams of sugar. I learned something last weekend. I never knew that milk had sugar in it. Ha! What in the heck. So even though I had been doing no sugar or nuts, apparently I still had some sugar without knowing it. Not my fault. I had NO IDEA!

Have you ever cracked an egg and it be bloody? I have heard people talk about it and I always thought "thank goodness that hasn't happened to me". Well it happened yesterday. Ew. Needless to say I didn't eat eggs this morning. It may have tainted me. What causes a bloody egg anyways? Whatever it is, its gross and I don't want eggs anymore. I already have an issue towards white eggs. Man. My options are getting slim here.

So I am so proud to announce....We are getting a puppy!! I cant even see straight I am so excited!! People, meet Rogue. He is a 5 week old weimaraner. Absolutely adorable. He is going to such a handsome man. This is the only recent photo I have of him. I cant wait till she sends us more. I cant believe I talked Scott into getting another dog. It went from "hell no, don't ask again" to "Sure, I cant believe I am saying this". Heck yes!

Baby Rogue

This Saturday is the Warrior Dash up in Hillsboro. I didn't heal up so I am not running. Lame. But whatever. I am going to take some fantastic photos of all these dashers. Then we are going to go out and have a delicious dinner downtown Portland and get some cocktails to celebrate Scott's birthday! September has so many birthdays. People be getting frisky during the holiday season.

Today is a big day. I made a huge pot of soup for our friend Stuart who got his tonsils out and cant eat anything. He said he has pretty much ate Metamucil. Whatever that is. I'm sure it doesn't have the goods his body needs so I boiled carrots, onion, chicken, sweet potato, cauliflower, kale and garlic. Threw that in the food processor until it looked like baby poo and added some chicken broth and some spices and wwaaabahhhm! Delicious. I ate it for breakfast since I am egg traumatized. Tonight is the Slightly Stoopid concert at the Britt. Should be fun! And I am helping out Corrie for a few hours as well. Oh and making dinner for our friends! Sheesh.

I wanted to make something delicious for dinner last night so I tried fish. I don't know what it is about fish but I am always scared to cook it. Turned out fabulous, if I don't say so myself.

Tilapia with Roasted Red Pepper Sauce and Veggies

1lb tilapia
20 blanched almonds
1 bundle cilantro
1/2 7oz jar of roasted red peppers
6-8 garlic cloves
1 zucchini sliced
1 crooknet squash sliced
1 crown of broccoli chopped
1 red onion chopped
1 teaspoon paprika
2 teaspoons salt
2 teaspoons pepper
1/2 teaspoon onion powder
olive oil for frying
 
Start with seasoning your tilapia filets with paprika, salt & pepper. Set aside.

 
 
In a frying pan cook your garlic cloves till they get slightly soft and roasted looking. Put the garlic, red peppers, cilantro, almonds and a tbsp of olive oil into your handy dandy food processor and puree until you get a nice creamy texture going on. Set aside.
 
Take you sliced veggies and saute in frying pan with 1 tbsp olive oil. Add about 2/3 of your cream sauce and cook veggies for about ten minutes, stirring regularly.

 
In ANOTHER pan heat up 2 tbsp of olive oil and cook your fish 3 minutes per side.
 
On your place, put some veggies and top with fish then add a little more of the sauce. Vwwaaalllaah!
