Strawberry Peach Cobbler

Dinner was a success! My non-paleo family even said that the cauliflower mashed potatoes I made were tasty. That's crazy! Even people that are paleo are hard to get to like them. I feel pretty accomplished after that meal last night. We had bacon wrapped dates for a starter, baked pork ribs, cauli mashers and green salad. For dessert we had strawberry peach cobbler and coconut ice cream.

I worked out yesterday, that was nice. My date showed up to so we had a super fun time :) Worked on the jerk. I was bummed because my hip flexor held me back from doing the split jerk style that I prefer. Then the wod was 5 rounds lunches with weight in the front rack position and double unders. I didn't do either. I tried to do the lunge and couldn't get back up....soooooo instead I did back squats and single unders. Can you say frustrated? Oh well. Tis life. I am thankful that I can do what I am doing.

So CrossFitGP is starting a paleo challenge started October 1st. A bunch of members are participating. I would do it but I am already strict paleo so I don't really see the point. I'm not going to win. But I am so here to help you all out that are doing it! If you need or are craving anything special and want a recipe suggestion just email me and I would be happy to help you out! Paleo is hard to get started on cause you have some pretty strong cravings for things like BREAD and PASTA, or DAIRY. Don't give in! There are a ton of paleo substitutes that will curb your cravings.

So this cobbler turned out delicious and I would think it would be yummy with any fruit combo! Blackberry, raspberry would be AMAZE. MMM....

Strawberry Peach Cobbler

2 cups strawberry's, chopped
4 peaches skinned and sliced
2 tbsp coconut crystals
1 tsp cinnamon

topping
1 1/2 cup almond flour
1 cup chopped pecans
1 egg
1 tsp cinnamon
2 tbsp coconut oil

Slice and cut all your fruit. Evenly sprinkle coconut crystals and cinnamon over the fruit in a large bowl and put in fridge for an hour or so to let the sugars get all slimy and juicy. So good.


Preheat your oven to 350F. Place your fruit in a 8x8 baking dish. In a mixing bowl stir all your topping ingredients together. This mixture will be crumbly and clumpy. Over the top of the fruit with your hands, crumble this mixture randomly. Place in preheated oven and bake for 35-40 minutes. Remove from oven, let cool and eat this with some vanilla coconut ice cream. HEAVEN!
