Green Beans & Bacon

Want to know something so super cool?!! I haven't even been blogging very long and I have gotten over 1,000 views! So awesome. I love that people are enjoying this as much as I am! You know what I love even more?! Talking to people that have actually tried my recipes, and love them. It's so awesome.

A lady at the gym tonight, her name is Stephen, and she is a sweetheart, we love her, anyways, she hasn't checked out the blog yet but she said she will. (run on sentence? I'd say so.) ANYWAYS, she said to me "you're just living the life aren't you?!" I thought about it, and said "yeah, actually I kinda am!" Heck yes I am. I mean don't get me wrong its not always glitter and unicorns but overall I feel pretty darn lucky. All smiles here!

I felt kinda pooey yesterday. It sucked, but I toughed through it. Had a nice workout at the good ol' Crossfit GP.  Got to see a bunch of lovely people and get my sweat on. PR-ed on my front squat 115# bitches. haha! Even though I COULD have and SHOULD have gone deeper. Next time. Our friend Stu tried out the free workshop last night. I think he is hooked :) I hope! Let's cross our fingers. He came over and joined us for dinner afterwards. He seemed pretty excited about it and said he will be there tonight! Booyah!

I am going to start something kind of exciting here people. Well I think it will be just fun and something to do for now. I am going to make my BBQ sauce, bottle it and sell it. For the paleo people in our circle or out, whatever works. Let me know if you want some! Its super delish. My lovely friend Amy has some awesome recipes too and we are going to mush our brains together and have some fun! Yep! I'm excited!

I haven't even started to think about the menu for Dave Matthews. Sorry mom. I will get on that stat.

You want to know something funny? My mom has 4 laying hens. Well she thought 4. Now she has 3 because Lucy, is not a Lucy. Lucy is a rooster. Well technically Lucy could be a Lucy because my mom named me Codi which is a boy name sooooo yeah. I kinda feel for Lucy. Mom told me that they are going to eat him. Why?! The cockadooooodle doooooo has gotta be kind of neat to hear in the am. She says they are going to eat him cause "he is mean to the hens and he tries to have sex with them, he is just a brat." This is what I think will happen. If my dad kills Lucy, then cooks him up and presents him on a platter to my mother I know she will not eat it. She will get all weirded out about it. Like seriously, lets be real with ourselves, she named this creepy bird and has held it like a pet. She will not eat it! I am so certain of this a bet her $20. She said she needed more then $20. Ha! So that right there proves she already doesn't want to eat him. Yep!

I am on hold right now with the unemployment department. Multi-tasking! Yes sir! Been 20 minutes so far. Sheesh. Killing me.

I am just going to say sorry for slacking on the plank challenge. I remembered yesterday that I forgot to do it Friday, Saturday and Sunday. Annie forgot too, obviously cause she wasn't reminding me. So I did it last night before bed, only because Scott reminded me. Then this morning I text Annie and we did it. Back on track! Whew! My lower back kinda hurts today. I tweaked it a little on the snatch work yesterday. Check these photos out we got last Saturday...

This green bean recipe has been in my families diet since I can remember. Its like a dessert. So good. I have not met one person who doesn't like it. Last night Stu said "these green beans are like dessert". So you'll love them too.

MMMMM.

Green Beans & Bacon

1 lb fresh green beans
1/2 lb bacon
1/2 yellow onion
1 tbsp garlic
1/2 tsp salt
1/2 tsp black pepper

In frying pan start cooking your bacon, onion & garlic at a medium heat until bacon gets a little crispy. Once bacon is cooked to a lite crisp drain about 1/2 the bacon fat. While your bacon is cooking, snip the ends off of the green beans. Add green beans and salt & pepper cook 15-20 minutes until bacon is cooked through.

Serve!

Pizzzaazzzy Pizza

I just tripped out on that word, Pizza. Weird. I literally stared at it and thought I spelt it wrong, then started sounding it out and saying it. It should be "Peet-sa" right? The English language is a trip. Crazy. Or as my gansta side would say "That shit cray" haha! Scott rolls his eyes at me when I try and be a thug. I just think its funny to joke around like that. It's not like I am serious. Sheesh!

HAPPY MONDAY!!!!!!!!!!!! Can't wait to see my crossfit family later. I missed it this weekend. We took Saturday and Sunday off. We stopped by the gym Saturday on our way out of town to drop off some cinny buns and take some photos of everyone getting their wod on. Perfect day for it, everyone was looking top notch! :)) We are such gym junkies. I love it.

We had such a great time this weekend. Even with all the little mishaps (for example, hungry Scott = grumpy Scott, Portland traffic, bridge draw, crappy navigation, and bathroom breaks. It makes it interesting, and its ridiculously stupid how easy and fun it is to travel for us. It's awesome. I fall more and more in love with this man every day. So let me tell you about the weekend...

We went to a wedding in Ridgefield, Washington. Scott's high school life friend Allen got married to a beautiful lady named Melissa. The venue was gorgeous, like a secret garden. There were all these cute garden benches that I wanted to take home. Jealous. Any who, I can say that I met some awesome people this weekend. Funny thing about it is that the 2 couples we hung out with the most are from GP. So we live in the same town and didn't even know we could have such a ball together! Good thing is, now we do :)) So in a nutshell... We danced, ate (paleo), drank red wine (don't hate, we NEVER drink so its ok), laughed a lot and just had a blasty blast. Sunday we woke up in a slight fog, I drove us to a Whole Foods in Vancouver and found my way their just me and the navi (proud moment) and got we got us some food in our belly's and more of course. We found 1.5L aluminum water bottles. HOLLLLAAA! With 2 options for drinking spouts. It's awesome. We are super excited about them, Can you tell?!

We didn't have anywhere to be or anything to do so we just did whatever we wanted. We went to the Bridgeport Village and shopped. I went to Urban Outfitters. Possibly my favorite store. I could have my whole wardrobe from there and be okay with it. Found a Saks outlet store and got some cool bottles, found an awesome retro gym bag at American Apparel. It's hot pink. No big deal. Got some really cute measuring spoons from Anthro. I love that place. I wish I could live there. Haha! We went to different sporting goods stores, and got some Chipolte, yummmm. Stopped at the Roseburg Ross cause someone told Scott it was awesome. It wasn't THAT awesome but we still found some stuff. Dropped by the parents, picked up a dozen fresh eggs and came home. I was so hungry when we got home. It was like 9 and we had nothing to eat. So my ever so kind boyfriend cooked us up some eggs and bacon. It was so yummy. Then bedtime. I slept like a rock.

So like I had mentioned in a previous post, this pizza is Amy and Sean McGillivary's recipe. We went to their home for dinner Friday after CF. We had so much fun. Sat outside on the patio, ate this heavenly pizza, and talked crossfit and food for hours. Their patio is so nice. It would be perfect for a paleo potluck (hint, hint...haha!). Sean and Amy are why we started crossfit.
Sean had been working on Scott for a while and finally we gave in and tried it. I honestly couldn't imagine my life without it.

So here it is people, you gotta try this.

Pizza

Preheat oven to 350F

Crust

2 cups almond meal
1 tsp baking soda
2 tsp coconut flour
1 tsp garlic powder
1 tsp salt
4 tsp Italian seasoning
1/4 cup of coconut oil
2 eggs

Combine all ingredients and knead into a dough. Place on pizza pan or stone, and work into a nice even crust. Bake crust for 15 minutes at 350F.



While your crust is baking, prepare your toppings and sauce.

Toppings

diced bell pepper
diced jalapeno
uncured pepperoni
uncured bacon cooked and chopped
tomatoes
sliced olives
mushrooms
fresh basil, chopped
whole milk cheese (optional, for binding toppings)

Clearly you could add or subtract toppings per your taste buds :))




Sauce

1 6 oz can tomato paste
3 tbsp Italian seasoning
3 oz of warm water

Combine sauce ingredients until a smooth consistency is made. Take your crust out of the oven (after 15 minutes of course) and spread sauce on the crust. Toss your toppings on there however you'd like.

Place back in over for 8-10 minutes to melt cheese and warm toppings.

Chicken Wings

First off, I think I have bad luck.

Well yesterday I did. Or maybe it's just my car that has bad luck. I have owned my car almost 5 years in December. December 13th to be exact. In the almost 5 years of our relationship I have only hand washed her like maybe 2 times. The second time being yesterday. I remember the one time I did a couple years ago I royally sucked at it. The side of the doors had dirt streaks still and water spots everywhere. I also remember getting a side ache from bending over to wash it. WOW! That's pathetic. Yesterday it didn't even phase me! I actually had fun washing it. Fun? That might be pushing it. But it wasn't bad. UNTIL... a huge crack spread crossed my windshield when I was rinsing it. Not just one, but two. Sweet right? Nope. Not sweet at all. Whaseva, life rolls on.

What was worse about yesterday?

My weaknesses came out and stabbed me in the tummy at cf. I came home from class and cried. Now if anyone really knows me, I don't cry. Ever. I am not an emotional person. I only cry when I get really mad. Or if I am watching Dave Matthews perform "sister" live with my sissy by my side. But anyways, we worked on the snatch. 10 x 1-1-1 from the hang, then knee, then ground. BLEH. I think why I got so upset about it is because I really am trying so so so hard. But I still struggle doing it correctly. God bless Phi and Scott for having to deal with my emotional escapades. I called Apphia and cried to her about it. I remember saying "This is so retarded, I am crying to you about my snatch" then we both laughed it off. They both put it into a nice retrospect for me. 2 months ago, I would have NEVER ever even tried it. I would have just given up. Now, I try, and finish. It makes me feel good knowing that mentally I am stronger then I ever have been. And as Scott says "Babe, think where you will be in a year." They're right. Nuff said. New day today :)

Who wakes up at 4:30 to do trigger point? I do. Well I didn't really have a choice because I needed Scott to show me what to do. My calves are so bound up and hurt really bad. Probably from running wrong, and then jumping rope yesterday. Ouch. My calves were cramping and  my feet too. I have been saying I need to get those double unders down. Well I should have worked on them cause the wod had them in it yesterday. So I had to do 3x the amount in single unders. So needless to say, my calves and shins and everything below the knee hurts. So this morning I did three different exercises with these contraptions. They seriously help. It's awesome!

So I met Annie (my accountability partner) at the track this morning and we did our homework for the endurance program. We even did the optional wod, so that means extra credit right?! I think so. It was fun. Back at it tonight for more running for the wod. Yay! Then guess what?!
I don't have to make food tonight. We are going over to Sean and Amy's for paleo pizza. This Amy, she is quite the cook. She makes a mean pizza. So yummy! She's going to let me share the recipe with all yall! So sometime next week I will have it up. How exciting is that!!

This weekend is a Paleo Potluck at Fish Hatchery Park for our box. We are missing it. BOOOOO! They are so fun! And I love seeing everyone out of the gym. It's great. Next time :))

For today's recipe I thought it would be fitting to do the best chicken wings you'll ever have. Seriously. I mean it. Scott goes big with these. Every time. We aim to please around here. We took these to the last potluck and everyone devoured them. In like 5 minutes. These are great to take to potlucks (like the potluck tomorrow), BBQ's, or just crush out a tray to yourself. Whatever tickles your fancy.

Chicken Wings

2 lbs of chicken wings or drumsticks (I prefer the little ones)

1 tbsp fresh rosemary
1 tbsp chili powder
1/2 tbsp smoked paprika
1/2 tbsp cumin
1 tbsp garlic powder
1/2 tbsp black pepper
1 tbsp onion powder
2 tbsp minced garlic
1 tsp dried sage
1 small bottle of Frank's Red Hot

Combine all ingredients and marinate wings for as long as you'd like, an hour or 2 works. But of course the longer the better :))

Throw these little boogers on your grill for about 40 minutes, flipping them every 10 minutes to get a nice crisp, or you can bake them at 350F for 45-50 minutes. Whichever you prefer!

Dig In! Makes sure you have a napkin ready, they aren't the cleanest things to eat! :))

Cinny Buns

Duhhhhnnn duhn dun dun!!!!

That was a super hero entrance. Boom!

I still don't have my face powder. Getting kinda redic. I must go to Medford today with my wallet this time. I'd loose my head if it wasn't attached!

I am disappointed in myself guys.... I didn't make it to open gym OR the 4:30 wod. I mean, I did do the running wod but still. Jealous everyone got to do dead lifts but me. Not jealous of the KB stuff you guys did. I went to pick up Scott from class (cause both of us decided to stop procrastinating on our vehicles the same day, without knowledge of the others doings, might I add.) and they all looked pretty miserable. I was sweating just watching them.
Remind me to not go to the gym if I am not working out. They make you feel really bad. I mean realllllly bad for not working out. It's a good thing cause I definitely don't want to miss another wod in my life. It's like we are obsessed or something...? PFFT. Obsessed. Nah. Just OCD.

That's awesome. I know.

Who eats chicken for breakfast? I do. And I did. Gotta get your protein in, and its better then a shake. I didn't feel like making eggs and the whole shabang this morning cause I was working on a little creation.

That's right people, paleo cinnamon rolls! WHAT in the H!? Yep, it happened. And they are amazing. Just saying.

Look at the beauty....

My mom nominated me to make the menu for our 2nd annual Labor Day family extravaganza! Come one come all! I love the circus. A cool one maybe, I have never seen a cool one. I want to see that show "O". It sounds like it'd be nothing short of amazing. Anyways, last year my parents and baby sister packed up in the car and drove up to Washington. George, Washington to be exact. It was a great time. We watched 3 whole days of Dave Matthews and 23 other bands. Soooo much fun. And we are back at it again this year. Scott's joining us this year. We are going to camp and site see during the day and watch the ever so talented Dave in the evening. There is only one other band this year with him, the Avett Brothers. They seem like they will be a good time too! Yay! My mom text me this morning and all it said was "34 days left, waaahhhhoooo" She's a little cookoo for Dave. :))

I have to come up with 4 breakfasts, 4 dinners and 4 lunches. Any ideas?! I need easy. I am open for suggestions!!

I want a pool to lay by today. Sounds so nice and relaxing. I have a shorts tan line on my thighs. I noticed it the other day at cf. Time for some pool time! Or river, or lake...Or cement back patio and a sprinkler...haha! Gotta work with what ya got :) Maybe I will sneak into my friends backyard and play in his pool, he said I could anytime but I feel weird and rude without asking before. I asked yesterday then got sleepy. So it didn't happen.

I went to River's Edge last night for dinner with my Phi. That's my best friend if anyone was curious. Her name is Apphia, its Greek from the bible. But she's not Greek, or from the bible. 

We sat on the patio which is gorgeous! Let's take a minute to be thankful for the nice setting of the beautiful flowing Rogue River and a nice cool breeze since our food took nearly 2 hours to get to us! And it wasn't even that good. Dangit. Not impressed. Grants Pass really has no where good to eat out at. Unless you want Mexican. Don't get me wrong, I could crush out a basket of chips and salsa like nobodies business. But I haven't done that in like a year, don't worry. I think AJA should move into the River's Edge building and that would be my favorite place to go. Yep. They should do it.

Okay, so I ate one of these cinny buns and it was amazing. So I took one to my love and he said it was delish too. So I think it passed the test.

Cinny Buns

3 cups almond meal (plus 2 tbsp)
1/2 tsp salt
1/4 cup coconut oil
2 tbsp raw honey
2 eggs (room temp)

Filling

1/4 cup raw honey
1/2 cup pecans
1/2 cup walnuts
1/2 cup raisins
2 tbsp cinnamon

Icing

1/4 cup coconut butter
1/2 tsp vanilla extract

Preheat oven to 350F. In a large bowl combine almond meal, salt and baking soda. In a separate bowl together eggs, honey and coconut oil. Combine the egg mixture to the flour and mix until a decently smooth dough.

On a large piece of parchment paper spray with coconut oil and knead out dough in a rectangular shape until 1/2  inch thick. drizzle melted 1/4 cup honey and sprinkle pecans, almonds and raisins evenly on dough.



Now its time to roll! Use the parchment paper to assist you in the beginning of the roll. You want it to be tight so take your time. Roll the dough into a nice log and cut into 1 inch thick slices with a oiled bread knife. Spray coconut oil in baking dish to avoid sticking and place in pan like so.

Got to be careful when rolling the bun, it's very fragile as you can see!


All comfy cozy in there



Put those buns in the oven and bake for 18 ish minutes until a light golden color on top and a toothpick comes out clean.


Drizzle that icing on top right before serving.

Taste test of course ;)

Turkey Sliders & Avo Slaw

WHEW! Today has been pretty productive if I don't say so myself. Woke up at 5:00 and went to Christie's running endurance class at 6:00. It was fun! Kind of... not as bad as I was expecting. Well I can't say that yet because she videoed us running individually and she is going to email us each our results and what we need to work on. This class has homework! How cool is that? Can't wait to read my results. I told Scott he has to do the HW with me. In total we ran over a mile, go me!

Anyways, That went till 7:00. Then Corrie, Annie and myself went to Rogue Coffee Roasters for an americano. YUM! Chit chatted for a bit and then they went off to work and I came home. Cooked me up a delicious scramble that had kale, onion, garlic and bacon in it. Also YUM! Next thing I knew it was 9:00. Time for my hair appointment, yay!! I love hair day, I can't ever style it like Melissa does...makes me flustered. I wish I had her every morning to blow dry my bangs for me. After the hair appointment I decided instead of calling the oil change place I would just drop by to schedule an appointment for my little car. I have been neglecting it, which isn't good when you own a VW because then all sorts of lights in the dash start flashing and noises happen and then I get anxiety. Not fun. So Dave, he's awesome by the way, fit me in today! I was like hollllllaaaa! But then I had to walk home. Which is fine in itself but I had to pee. So I'm walking down F St, then G St, then 4th St with my 15 lb purse and a huge water bottle with a full bladder. BLEH! But I am thankful that Melissa's salon is halfway home for me to stop and use the facilities. Thanks Liss!

I am missing open gym right now. Bummed about that cause I really wanted to work on my OHS form and try and do some double unders. Katy coaches it, she's a doll! Yesterday we told her that we were both going to open gym and she called us the colorful couple (How cute is that?!). I guess its true, the more colors the better when your working out right?! Right! Speaking of color...I wore my new oly shoes yesterday for OHS and power cleans. They really do make a difference. I'm not kidding. I felt a lot more balanced and stable. And they are "money" for box jumps. Big time.

K so this is funny guys...I think that because I am trying to adjust to this newness of no job my brain is feeling a little overwhelmed maybe? I don't know.

I ran out of my face powder the other day. I have been needing to get over to Medford (30 miles away from home) to get some more, bad! So yesterday afternoon around 2 I headed over to Medford. Get there, go to Macy's, I figured I would try on some clothes take my time ya know. Be a girl. I'm in the dressing room trying on dresses to see if I need something new for a wedding we are going to in Portland this weekend. I didn't fall in love with any of them. So I call Kimmy, talked to her about the dresses and what not. Blah de blah. Walk down to AE to check out the shorts but stopped by a little store that had some cute headbands. I picked out 3 really cute headbands which I am sad that I didn't actually purchase because guess who opens up there purse and forgot their wallet?! Yeah...Me. RETARD. I told the girl that I left my wallet in my car to spare the embarrassment and leave. Laughing (out loud), so I was lol-ing at myself for my dark shade of blond move and head out to my car.

Wanna know what makes this story even worse?

When I pulled off of the freeway into Medford my gas light came on. Now I have no money and no gas. Poop. Halfway home I got nervous and stopped at a gas station and scrounged up $5.00 in my center console.

Well that was a nice 2 hour experience. Really, I am still laughing about it. Typical.

K so for the recipe today I did one of my man's very favorites! This is super delish and light. We love it and eat it on a regular!

Turkey Sliders

1 lb organic ground turkey
1/2 red onion
1/2 red, yellow or orange bell pepper
2 tsp minced garlic
1 tsp cumin
1/2 tsp crushed red pepper flakes
1 egg
salt & pepper
coconut oil

Get your handy dandy food processor out!

Place your onion and bell pepper in processor until minced. I strain these afterward to remove excess water. In a bowl mix together with your hands ground turkey, onion, bell, garlic, egg and all spices. Make into little patties for the sliders and fry up in some coconut oil.



Avo Slaw

1/4 head of red cabbage chopped and thinly sliced
1/4 head of green cabbage chopped and thinly sliced
1/2 red onion sliced paper thin
1 ripe avocado
juice of 1 lime
1 tsp garlic powder
1 tsp onion powder
1/2 tsp crushed red pepper flakes
salt & pepper to taste

Mix the avo, lime and all the spices to a cream in the food processor, or not. It's just a lot easier that way. Then mix into the cabbage and onions. YUM!

Place the turkey sliders on top or the side and grub it up! Nom Nom!!

Beef Jerky

Now that I have all this extra time on my hands, it seems to be slipping away from me faster then before. How does that happen? I don't know either, but it needs to stop!

I guess I have been a pretty busy little bee. I woke up early this morning and made a list of each room in the house and made a goal to clean one a day, at least, from top to bottom. I chose the guest bathroom for my first day of cleaning. It only took me like a half hour so I should probably knock out another one for shits an gigs. I have been sitting on the computer for the past hour though. Trying to figure out Pinterest and  a fan page on FB and all this other fun stuff! So many ways to connect! Its a crazy cyber social world out there. Mind boggling to think that only about 10 years ago it was little old myspace...

So guess what? Well, really it's like guess three?

1. My booty is getting firmer. SSAAWWEEET!!

2. Scott surprised me with a new laptop yesterday. So awesome. I love it. Its white and red and so perfect. Just like him!! (puke, I know. But really, he is.) His reasoning? I guess I can't blog from bumming off his computer anymore. Which is fine by me! Even though his keyboard is awesome, my fat thumb keeps touching the cursor on the finger pad and knocking my cursor all over the screen causing me to delete things and write in the middle of other sentences. So if there are any major typos I apologize. I am trying to get used to this new device.

3. My knee hurts. The inside of it, like the joint or something. No beuno. I need to figure it out. I start running tomorrow remember?! Yesterday I ran over a mile. Heck yes. It was separated into 5 segments but still, ran the whole thing. Bam! I think running is just a HUGE mental block for me. This is my head while I run, I get all...
"Omg, I can't breath, okay breath in through your nose out through your mouth, okay no heel strike. Damn it, I heel striked. Don't roll on the side of your left foot, Codi. Ouch, ouch, ouch. Ahhh the wind is pushing against me. I can't make it, I can't make it. Yes, yes you can! Only one more lap. AHHHH!"
Seriously? It's just running. Now you know why and how bad I need this running endurance program.

Do any of you have gardens this year? I don't know what the heck is up with ours. It decided to grow for the size of dinosaurs. No joke. The other day I had to amputate an entire zucchini plant because it completely grew out of the planter box and onto the lawn, causing major suffocation to the grass. Sorry zook, but the grass is cooler then you. Our tomato plants are also a little excessive this season. We have 11 of them all spaced out as you would and in a nice little cage from the incubator. They grew straight up. Like 5 feet tall and then when the rain came they all toppled over each other into a mess. I went out there yesterday to try and organize and untangle the little guys but instead of helping I kept breaking all the joints and gave up. Really, I just started eating the cherry tomatoes off the plant. I could eat those all day long. SO GOOD!

Beef Jerky

2.5 lbs london broil or any lean roast

2/3 cup coconut aminos
1/4 cup worcestershire sauce
1/2 cup hot water
1 tbsp liquid smoke
1/2 tbsp garlic powder
1 1/2 tbsp minced garlic
1 1/2 tbsp onion powder
1/2 tbsp cayenne pepper
1 tbsp Frank's Red Hot
1/2 tbsp kosher salt
1 tbsp black pepper

Witches Brew


Place meat in freezer for 1-3 hours to get frozen but not completely frozen. It's much easier to cut when firmer. Slice very thinly entire roast. Place in container to marinate for 6 or more hours. We leave ours in overnight usually.

Turn on dehydrator at 160F and lay meat flat on the crates. Cook for 6 hours and VOILA! Delish jerky at your fingertips!

Mango Fish Taco Salad

There has been a few slight adjustments in my life since Friday. I have been dismissed from my job, which means I now have a new phone and new phone number. I won't have an eyesore of a Honda Civic sitting in my driveway anymore either. No joke people, this car is wrapped in a vinyl that screams "Look at me look at me!!" Bright blue and yellow and so flashy, I litteraly went into Verizon on Friday and the employee there asked me where I worked. I told him. He goes "Oh, yeah I have seen this car on bridge street and I laugh everytime i see it." One of our good friends Sean has rode his bike by numerous times and he gets a good kick out of it. Jokes not on me anymore :)) Thank goodness!

Am I stressed? A little....Do I feel like a bum...Yes. Am I still smiling? OF COURSE! Probably bigger then before cause I just lost a huge headache.

Guess what else is awesome about it?

I can workout at whatever Crossfit class time I want. I already worked from home so cleaning, laundry, cooking and all those susie homemaker traits are embedded in me. Well let me be honest with myself, this has been me for years. I actually enjoy doing that kind of stuff. It's fun to me. :)) So I predict that I will get all OCD on our house and make everything sparkle.

I had a fun weekend, Saturday afternoon I got to spend with one of my very favorite people. Ms. Terri Foster. She is THE most caring, loving, giving, nicest person I know. I am so lucky to have such a genuine lady in my life. I love you Terri!

We went to dinner at BamBu's in Medford. So yummy, we shared a arugula mango salad, chicken curry and some sort of fish sampler. Delish. Then we went to the mall got some supplies and went to TJMAXX. A trip to Medford for her and I wouldnt be complete without a maxinista stop. Then Sunday we went to Terri and Dan's for a BBQ lunch, fresh watermelon, spinach salad and burgers. Yum!

After we got back from the BBQ we did a major grocery shopping trip and bought the entire store. Not really, but we got so much stuff the cart was hard to push around corners. Pfffttt, don't even think about calling me a whimp.

We had our friend Stu over for dinner. We are in the process of trying to convert him over to Crossfit and Paleo. Muuahahahahahahahaah (evil laugh) But really, they are both so awesome why wouldn't you want to?!

My throat hurts, why???!!????! Its the middle of summer, and a sore throat? Im gonna blame it on the fact that last night Scott and I passed out on the couch and woke up at midnight all hot and confused where we were and why we weren't in bed. I am also going to take a good guess that my mouth was open cause I was obviously out hard, so maybe it got dry...?? Yeah, lets go with that cause no one wants a cold in the middle of the summer. Especcially right after being granted freedom. I guess our rest day took a toll on us! So funny.

Here's the recipe, try it, love it, make it for your friends and family. It's an awesome summer night dinner, light and refreshing! YUM! :))

Dinner is served!


Mango Fish Taco Salad

Avo Cilantro Spread

1/4 cup grapeseed oil (or sesame)
1/2 bunch chopped cilantro
3 tbsp white balsamic vinegar
juice of 1 lime
1 ripe avo
1/2 tsp sea salt
1 tsp garlic powder
1/4 tsp black pepper

Combine all ingredients in your food processer (my best friend), blend until you get a smooth creamy shiny texture. Place in fridge to chill while you prepare the rest of the meal.



Salad

Equal parts romaine lettuce and shredded cabbage (I used red and green cabbage for presentation)
Red onion sliced paper thin
diced english cucumber (or fresh garden cucumber, Thanks Amy McGillivray)
diced mango
macadamia nuts (these nuts are so dang expensive! Like really?!?!)
cilantro and lime wedges for garnish

Assemble the salad layered or tossed.



Fish

1 1/2 lbs of Cod, or whatever fish you'd like really. I have used Halibut and Talapia as well.
2-3 tbsp coconut oil for sauteeing
1 tsp sea salt
1/2 tsp black pepper
1 tsp cumin
3 tsp smoked paprika
dash of red chili flakes

In pan bring oil to medium heat, add fish to pan and season generously. Cook until opaque and fish flakes easily. Remove from heat.

Grab a plate, bowl whatevers clever, toss some salad on there, layer with fish, nuts, avo cilantro cream and fresh salsa if you want to get extra crazy.

We ate it buffet style on our picnic table :)

Banana Nut Mini Muffins

Great song people! Atmosphere knows how to say it right! I love the sunshine, just put a smile on everyone's face! We went down to the Local Growers Market today. Found some pasture chickens! Booyah!! Went there looking for it, came home with it. Can't get any better then that. Scott makes some killer wings, no joke, best wings ever. One of these days I will post the recipe.

My Saturday routine, wake up, make the bed, coffee, then Scott makes us eggs and bacon (the best scrambled eggs ever, so fluffy, might I add), get dressed for CF and head out!

Todays wod was so fun! Chris was inspired last weekend by all the elite athletes at the games so he had us do one of the team wods. This one was my favorite one to watch too! Here it is...there was 12 of us in class today so we did 3 teams of 4. In pairs of 2 you complete the following:

750M Row while your partner holds front rack position
50 burpees while your partner holds OH position
50 thrusters while your partner holds the dip position in rings
(you can switch as many times as needed to complete the wod, and weight was not rxed so you choose)

Scott, Annie, Scott and myself did it in 16:09....so much fun! Everyone worked together cheered each other on and killed it. Shout out to everyone today that participated and to Chris for coaching us through it!! I am so proud of my CF Family!

Stoked on my thrusters, getting those dialed in finally! Everyone talks about how much they hate thrusters, I liked them today. Weird. The OH position is the most foreign thing to me! MAN! Sucks, open gym here I come!

I noticed on FB that someones 30th birthday is coming up next weekend....uuuuhhhhhhhhuuuummmm....Anna?! Is it you!? I don't think you know, but birthdays are HUGE for me. It comes around once a year, and its a day that should be dedicated to doing whatever your little heart desires and your right about everything, ALL DAY! YAY!! So what's the plan!? :))

Made these muffins last night, took them to the gym this morning cause it makes 36 of them! Sheesh! If I didn't bring them to share, I would be stuck on the couch with nothing but crumbs surrounding me and a belly ache. No beuno. But a couple at a time are do-able.

Banana Nut Mini Muffins


2 1/4 cup almond meal
2 ripe bananas smashed
1/4 tsp sea salt
1/2 tsp baking soda
1 tbsp cinnamon
4 tbsp coconut oil
3 eggs
1 tsp pure vanilla extract
1 cup chopped walnuts
1/2 cup organic dark chocolate chips

preheat over to 350F

In medium bowl mix together wet ingredients (bananas, oil, eggs, vanilla), in another bowl add dry ingredients (almond meal, salt, baking soda, cinnamon) slowly add dry to wet and mix together till well incorporated, lastly fold in walnuts and chocolate chips.

Get your mini muffin pan out and put paper liners in each cup, if you do not have the liners use a little coconut oil to pan so they dont stick, cause they will, trust me.

Cook at 350F for 16-18 minutes till toothpick doesn't grab any gooey.

Prep Time 10 minutes | Cook Time 16-18 minutes | Eat Time 2 seconds |

Cool slighty and eat one, or two or eight! They are mini for a reason! :))

Chef Salad - Picnic Style

Happy Friday All!

Plank challenge is going good, day 3 now. This morning sucked actually. I think I did it too early. 

Did anyone watch the "fittest crowd on earth" video from the CF Games? Redic. But no joke that's really how it was. CRAZY! I guess when I look awesome like most those girls maybe I will run around in spandex and a sports bra. Nope, just kidding. Unless it was to be funny.

So I hurt. EVERYWHERE. Can't help but smile about it though cause you know what that means.....those baby muscles in there are growing! I bragged on IG and FB about this so I might as well toot my own horn on my blog right?!

Yesterdays WOD @  CrossfitGP.com  was... 

Strength
3×3 Pausing front squats as heavy as possible.
Hold the bottom of the squat for 3 seconds. Use the same weight for all three sets.
Conditioning
3 rounds for time
20 power cleans(95/65)
20 hand release push ups

I did it! HOLLLLAAA!!! And I learned that power cleans are fun! Thanks Anna, Katy and Scott for the little reassurance I could do it :)

I am really super excited for Sunday. One of my favorites is coming to visit me, Ms. Natosha King. YAY!!! We worked together for a short time till she got fired cause she got mouthy (haha!) and I am so thankful that I met her through work cause otherwise I would have been living without this super cool chick in my life! Can't wait to see you Tosh!!!

I know you probably all know this by now, but my boyfriend is so great. He is so super supportive of me in everything I do. He totally came home and busted out these stickers for me! Surprise!! I love you baby! Anybody wants one, let me know! :)))

After dominating the wod yesterday, Scott and I went out to good ol' Merlin and watched some Buck Harms at concerts in the park. It was awesome! We met Annie and her husband, Scott out there. They are adorable. Music style? Some Johnny Cash, Merle Haggard, and more old countryish jams. I guess he plays out at Galice Resort a bit too so you people should probably go watch them and get your boogie pants on! Packed up our chairs and I pre-made us a delicious chef salad of course.

I am obsessed with music. I'm not kidding. Most any kind really just depends on my mood. Anywhere from Dave Matthews (Fav), to Dubstep, to The Kooks, gotta throw in some Grough & Eligh some old classic rock like the jam I am listening to right now "Can't you see - by the Marshell Tucker Band", you name it, I will give it a try. I always have music playing on the good old Pandora One. Had to upgrade cause those dang commercials annoy the poo out of me. Not literally, just figuratively.

K to the easy peasy chef salad!



Chef Salad - Picnic Style

Salad-
6 strips of bacon 
3 hard boiled eggs
red onion (diced)
cucumber (diced)
black olives (sliced)
cherry tomatoes (diced)
scallions (chopped)
romaine lettuce (chopped)

Slice em, dice em, chop em, whatevers clever

Chicken-
1 lb chicken thighs or breast
1 garlic clove minced
1/2 tsp onion powder
1/2 tsp fresh black pepper
1/4 cup coconut aminos
dash of sea salt
coconut oil for frying chicken

Dressing-
1/4 cup EVOO
1/4 cup white wine vinegar
1 tbsp dijon mustard
1 tsp garlic powder
1/2 tsp onion powder
1 tbsp sesame seeds

Heat pan with coconut oil
Place chicken in pan and sprinkle spices on top, cook for a 3-5 minutes still they sear a bit
turn meat and pour coconut aminos over top, cover and let cook till meat is done 12-15 minutes or so

In a seperate pan fry up your bacon to a crunchy state, let cool and chop those suckers up (love me some bacon bits!!)

If you are taking this to a picnic, or somewhere to eat out of your home, my suggestion is to place all the toppings (minus bacon & chicken) on the bottom of tupperware then lettuce on top. It is WAY WAY easier to disperse the ingredients without a mess this way. Get some chicken and bacon on there, drizzle some dressing and your set! Grub up!!

Pulled Pork with Zesty BBQ Sauce

Lets start this off with a Plank Challenge, its so important I bolded it. 30 days, starting yesterday!

READY.... SET..... GO!!!

I have come to the conclusion that most of my "problem areas" such as my muscle ups, pullups, kipping pullups, lifting, well the list goes on lets just say most everything revolves around your core right?! Well Ms. Annie and Coach Anna put us to a challenge, plank, and plank every day for a minute. Do it with me people! Once your not shaking and dying at the minute mark, bump it up 15 seconds. Annie and I push each other, we started last night (a day early) AND up-ed it to 1 minute 30 seconds already. (Annie - it was hard!)

I bought a jar of coconut oil just for the sole purpose of eating spoonfuls of it. Chris and Corrie Dunkin (owners of CrossfitGP) do it so I thought we should do it too. Its benefits are so good for you. Last night we tried our first spoonful before dinner. It tasted so much better then I had expected. It tasted like coconut...Go figure! 



Bummer deal, 3:00pm slot for the Warrior Dash is full. There are different heats but I don't know that we will be participating cause the previous and following weekend are full. We have 2 kids (dogs) and that's a lot of house sitting for our friends. Haha!

My baby sister, Emily got a puppy. He is so cute. Why are puppies so great?! I just absolutely LOVE puppy breath! I can't remember what kind of dog he is. It's like a callujah or something. Anyways, here is a picture of him sitting! I am such a proud aunty. :))

Soooooooooo.... I ordered some Reebok Nano 2.0's yesterday. BOOOYAH!!!! Super stoked for their arrival. My Nike's are starting to smell a little bit, so its time. Plus, Crossfitters don't wear Nike's apparently. I was in the 2% of people at the games in Nike's. Who cares really, honestly Nike is better at the crazy neon wild child color design. To each his own. :))

So Scott and I got a pig, I am so happy I didn't see this pig while it was still a living, breathing fatso. I would have felt even worse. This pig came from our good friends parents. They raise them and butcher them themselves! How awesome is that?!

When Scott brought the pig home I was helping him transport it from the van to the freezer. There was something weird about just knowing that this pig was alive yesterday. I named him Wilber and tried explaining to Scott how it seems different then buying an already packaged been dead for a while pig from the store. He looked at me like I was a crazy lady and told me to not think about it like that. When I don't think of it like that it's awesome! We have a bunch of pork at our fingertips without any hormones! So cool.

Yesterday I popped a Wilber shoulder into the oven for a few hours and made some pulled pork. YUM!!!!

Fresh garden veggies!? Yes please :)


Pulled Pork

1-3lbs of pork shoulder or butt roast

preheat oven to 350F
Place pork roast in a shallow roasting pan uncovered until internal temperature reaches 160F-170F
about 2 hours for ours

Zesty BBQ Sauce

3 lg garlic cloves
1/2 sweet onion
1 6 oz can organic tomato paste
1 cup organic chicken stock
1 tbsp dijon mustard
2 tbsp apple cider vinegar
1 tbsp EVOO (extra virgin olive oil)
1 tsp sea salt
1 tsp fresh black pepper
2 tbsp chili powder
2 tbsp raw honey
1/2 tsp cayenne pepper
dash of red chili flakes for extra pizzzaaaaazzzz! :)

Blend garlic and onion in food processor until minced, I wanted my BBQ sauce a little chunky.
Combine all ingredients in a saucepan and cook on a low to simmer for 20 minutes or so.
I put some of this deliciousness sauce on top of the pork while it cooked.

Once pork is done, remove from oven and let cool. Shred with your hands and remove excess fat. Place in saucepan with about a cup (or make it however saucy you'd like) of the BBQ sauce (I saved the rest of the BBQ sauce for another recipe) and cook on low for 10-15 minutes.

This is sooooo YUMMY!!!! We ate it with sauteed squash and onion from the garden and a spinach salad... Hope you like it! :))

Chocolate Chip Cookies

It's the middle of July, in Grants Pass Oregon, and its disgusting outside. Rainy, humid, thunderstormy weather. BLEH. Part of me loves it. It reminds me of when I was little and would lay out on the back deck squished in between my mom and dad watching the angry sky whirl around us. It is an amazing world we live in!

I am so excited!!!!!!!!!!!!!!!!!!!!!!

Christie, one of the coaches at CrossfitGP, is starting a 6 week endurance program for running. I am signed up and there is no turning back now. :)) I am the WORST at running. I am not exaggerating either. She has her work cut out for her, haha! But its gonna be awesome cause I will get better at running.

GREAT NEWS! My body hates me and won't lean out. Probably has something to do with hormones or something lame like that. But I have seriously been so strict and trying so hard. Not to mention that I don't have any patience. None. Scott can fill you in on that one.  My internal time clock sucks too, I think time goes by faster then it really does. Oh well. Anyways back to the weight issue... My body finally gave a little bit. YAY! 4lbs lighter from June 20th. HALLELUJAH!! 

I made these cookies yesterday quick like before CF. I put them on my pretty vintage pink glass plate and took them down to the gym to share. Everyone's response is usually somewhere along the lines of "Gosh Codi, sometimes I hate you!" I know that's not true. They really love it when I bring treats, I know this is true because they get devoured! So stop fibbing people, you love it.

Plus, if your gonna have sweets, after your workout is the best time!

Chocolate Chip Cookies 

1 1/2 cups almond meal
1/2 tsp baking soda
1/2 tsp sea salt
1/4 cup raw honey
2 tbsp coconut oil (I microwaved for like 10 sec to melt, same with the raw honey)
1 egg
1/2 tsp vanilla
1/4 cup organic dark chocolate chips

preheat that oven to 350F

In a medium bowl mix together dry ingredients (almond meal, baking soda and sea salt)
In a small bowl mix together remaining ingredients (raw honey, coconut oil, egg, vanilla)

Combine wet with dry and mix in your chocolate chips

Cook for 12 minutes till goldeny beautifulness 

I made 12 cookies, about a spoonful for each
