Anyways, That went till 7:00. Then Corrie, Annie and myself went to Rogue Coffee Roasters for an americano. YUM! Chit chatted for a bit and then they went off to work and I came home. Cooked me up a delicious scramble that had kale, onion, garlic and bacon in it. Also YUM! Next thing I knew it was 9:00. Time for my hair appointment, yay!! I love hair day, I can't ever style it like Melissa does...makes me flustered. I wish I had her every morning to blow dry my bangs for me. After the hair appointment I decided instead of calling the oil change place I would just drop by to schedule an appointment for my little car. I have been neglecting it, which isn't good when you own a VW because then all sorts of lights in the dash start flashing and noises happen and then I get anxiety. Not fun. So Dave, he's awesome by the way, fit me in today! I was like hollllllaaaa! But then I had to walk home. Which is fine in itself but I had to pee. So I'm walking down F St, then G St, then 4th St with my 15 lb purse and a huge water bottle with a full bladder. BLEH! But I am thankful that Melissa's salon is halfway home for me to stop and use the facilities. Thanks Liss!
I am missing open gym right now. Bummed about that cause I really wanted to work on my OHS form and try and do some double unders. Katy coaches it, she's a doll! Yesterday we told her that we were both going to open gym and she called us the colorful couple (How cute is that?!). I guess its true, the more colors the better when your working out right?! Right! Speaking of color...I wore my new oly shoes yesterday for OHS and power cleans. They really do make a difference. I'm not kidding. I felt a lot more balanced and stable. And they are "money" for box jumps. Big time.

I ran out of my face powder the other day. I have been needing to get over to Medford (30 miles away from home) to get some more, bad! So yesterday afternoon around 2 I headed over to Medford. Get there, go to Macy's, I figured I would try on some clothes take my time ya know. Be a girl. I'm in the dressing room trying on dresses to see if I need something new for a wedding we are going to in Portland this weekend. I didn't fall in love with any of them. So I call Kimmy, talked to her about the dresses and what not. Blah de blah. Walk down to AE to check out the shorts but stopped by a little store that had some cute headbands. I picked out 3 really cute headbands which I am sad that I didn't actually purchase because guess who opens up there purse and forgot their wallet?! Yeah...Me. RETARD. I told the girl that I left my wallet in my car to spare the embarrassment and leave. Laughing (out loud), so I was lol-ing at myself for my dark shade of blond move and head out to my car.
Wanna know what makes this story even worse?
When I pulled off of the freeway into Medford my gas light came on. Now I have no money and no gas. Poop. Halfway home I got nervous and stopped at a gas station and scrounged up $5.00 in my center console.
Well that was a nice 2 hour experience. Really, I am still laughing about it. Typical.
K so for the recipe today I did one of my man's very favorites! This is super delish and light. We love it and eat it on a regular!
Turkey Sliders
1 lb organic ground turkey
1/2 red onion
1/2 red, yellow or orange bell pepper
2 tsp minced garlic
1 tsp cumin
1/2 tsp crushed red pepper flakes
1 egg
salt & pepper
coconut oil
Get your handy dandy food processor out!
Place your onion and bell pepper in processor until minced. I strain these afterward to remove excess water. In a bowl mix together with your hands ground turkey, onion, bell, garlic, egg and all spices. Make into little patties for the sliders and fry up in some coconut oil.
Avo Slaw
1/4 head of red cabbage chopped and thinly sliced
1/4 head of green cabbage chopped and thinly sliced
1/2 red onion sliced paper thin
1 ripe avocado
juice of 1 lime
1 tsp garlic powder
1 tsp onion powder
1/2 tsp crushed red pepper flakes
salt & pepper to taste
Mix the avo, lime and all the spices to a cream in the food processor, or not. It's just a lot easier that way. Then mix into the cabbage and onions. YUM!
Place the turkey sliders on top or the side and grub it up! Nom Nom!!
