Pulled Pork with Zesty BBQ Sauce

Lets start this off with a Plank Challenge, its so important I bolded it. 30 days, starting yesterday!

READY.... SET..... GO!!!

I have come to the conclusion that most of my "problem areas" such as my muscle ups, pullups, kipping pullups, lifting, well the list goes on lets just say most everything revolves around your core right?! Well Ms. Annie and Coach Anna put us to a challenge, plank, and plank every day for a minute. Do it with me people! Once your not shaking and dying at the minute mark, bump it up 15 seconds. Annie and I push each other, we started last night (a day early) AND up-ed it to 1 minute 30 seconds already. (Annie - it was hard!)

I bought a jar of coconut oil just for the sole purpose of eating spoonfuls of it. Chris and Corrie Dunkin (owners of CrossfitGP) do it so I thought we should do it too. Its benefits are so good for you. Last night we tried our first spoonful before dinner. It tasted so much better then I had expected. It tasted like coconut...Go figure! 



Bummer deal, 3:00pm slot for the Warrior Dash is full. There are different heats but I don't know that we will be participating cause the previous and following weekend are full. We have 2 kids (dogs) and that's a lot of house sitting for our friends. Haha!

My baby sister, Emily got a puppy. He is so cute. Why are puppies so great?! I just absolutely LOVE puppy breath! I can't remember what kind of dog he is. It's like a callujah or something. Anyways, here is a picture of him sitting! I am such a proud aunty. :))

Soooooooooo.... I ordered some Reebok Nano 2.0's yesterday. BOOOYAH!!!! Super stoked for their arrival. My Nike's are starting to smell a little bit, so its time. Plus, Crossfitters don't wear Nike's apparently. I was in the 2% of people at the games in Nike's. Who cares really, honestly Nike is better at the crazy neon wild child color design. To each his own. :))

So Scott and I got a pig, I am so happy I didn't see this pig while it was still a living, breathing fatso. I would have felt even worse. This pig came from our good friends parents. They raise them and butcher them themselves! How awesome is that?!

When Scott brought the pig home I was helping him transport it from the van to the freezer. There was something weird about just knowing that this pig was alive yesterday. I named him Wilber and tried explaining to Scott how it seems different then buying an already packaged been dead for a while pig from the store. He looked at me like I was a crazy lady and told me to not think about it like that. When I don't think of it like that it's awesome! We have a bunch of pork at our fingertips without any hormones! So cool.

Yesterday I popped a Wilber shoulder into the oven for a few hours and made some pulled pork. YUM!!!!

Pulled Pork

1-3lbs of pork shoulder or butt roast

preheat oven to 350F
Place pork roast in a shallow roasting pan uncovered until internal temperature reaches 160F-170F
about 2 hours for ours

Zesty BBQ Sauce

3 lg garlic cloves
1/2 sweet onion
1 6 oz can organic tomato paste
1 cup organic chicken stock
1 tbsp dijon mustard
2 tbsp apple cider vinegar
1 tbsp EVOO (extra virgin olive oil)
1 tsp sea salt
1 tsp fresh black pepper
2 tbsp chili powder
2 tbsp raw honey
1/2 tsp cayenne pepper
dash of red chili flakes for extra pizzzaaaaazzzz! :)

Blend garlic and onion in food processor until minced, I wanted my BBQ sauce a little chunky.
Combine all ingredients in a saucepan and cook on a low to simmer for 20 minutes or so.
I put some of this deliciousness sauce on top of the pork while it cooked.

Once pork is done, remove from oven and let cool. Shred with your hands and remove excess fat. Place in saucepan with about a cup (or make it however saucy you'd like) of the BBQ sauce (I saved the rest of the BBQ sauce for another recipe) and cook on low for 10-15 minutes.

This is sooooo YUMMY!!!! We ate it with sauteed squash and onion from the garden and a spinach salad... Hope you like it! :))
