Slow Cooker Chicken Enchiladas
Its pretty much the weekend and you know what that means? I literally spent the ENTIRE week on my ass. No joke. On the couch, on the bed, on the chair. Lots of TV and lots of movies. Rough life. Sucked really. Good news, I am on the up and up. Throat is slowly feeling a lot better and I have more energy. I know this because I have been doing a lot of cleaning. Yay! Fun stuff. Scott is so lucky to have a girlfriend that is OCD and cleans everything. Ha. Its probably more annoying then anything. But whatevs.
Since we are talking about Scott, I just wanted to let you all know that he has been kicking ass at the gym! CrossFitGP is doing their job and Scott is hitting some awesome PR's! I am so excited for him :) Gooooooo Scott! You strong man you!
Rogue is sleeping on me right now and he yawned and I got a huge wiff of puppy breath. So cute. Love it!
So tomorrow is the monthly CrossFitGP Paleo Potluck. This month is extra special thought because its going to be at the coast! WHHHAA!!? Fun right? Heck yes, Barb and Kurt have a house on the Oregon Coast and I want to go! Hold back? Brand new puppy that isn't fully crate trained for more then 2 hours...next holdup, he cant be in public cause he doesn't have all his shots. Plan..? Take the crate, keep him in the back of the car and check on him every hour or so to go potty. GENIUS! :)
I made this delicious dinner last night and it was super easy peasy and comforting. Fall is approaching. I can't wait. I love the cool days. Today is kind of chilly and cloudy, I wish it'd rain or something. That'd be awesome. Anyway, you should make this.
Slow Cooker Chicken Enchiladas
2lbs chicken thighs
1 yellow onion diced
1 green bell pepper diced
1 yellow bell pepper diced
1 4 oz can diced green chiles
1 4 oz can diced jalapenos
1 14 oz can diced tomatoes no salt added
1 8 oz can tomato sauce
3 tsp minced garlic
1 tbsp cumin
1 tbsp chili powder
1 tbsp oregano
salt & pepper to taste
cilantro
red onion minced
avocado
It's slow cooker time!
In your slow cooker put all your ingredients in and put on high for 6-8 hours. Stirring occasionally to mix the flavors around.
6-8 hours later....put some in a bowl and garnish with minced red onion, cilantro and avo! Eat up! It's delicious, and hot. Be careful!
