Stuffed Bell Peppers

Friday has arrived!!

Warrior Dash is tomorrow. I love CrossFit events. They rock. Speaking of CrossFit events, did you people know that they are re-airing the Reebok CrossFit Games?!!!!!!!!!??

I seriously think going to this event was what made me want to really give CrossFit my all. I said I would never complain again about a wod, and I really don't think that I have. Crossfit has truly changed my entire outlook on life and made such a positive impact mentally and physically. The relationships that I have built within the CrossFit Community are some of the best I have ever had my entire life. They are all genuine people that legitimately care about fitness and health, and not just their own but their peers as well. I love it.

Gonna be so fun to watch it. Its going to bring back some awesome memories. Scott and I had such a blasty blast down there watching the strongest people in the world just battle it out, give it their every last drop of energy to these workouts. Man. Just a bunch of bad asses really. You better watch it.

This was a team event, these were super crazy fun to watch! Everyone just going balls to the wall and working together to get work done!
  
WHEW! So there is some of our recaps. Watching it is going to be like being there all over again. YAY! Can't wait.

So I am a ratard and made stuffed peppers and didn't take any photos. Spell check is telling me I spelt retard wrong, I know I did. I like saying RAtard instead. Anywho... Trust me you don't want photos of the leftovers cause they look like baby food. Sorry. So trust the fact that these are amazingly delicious. When are stuffed peppers not delicious? That's what I thought.

Stuffed Bell Peppers

4 green bell peppers (get ones with 4 nubs on the bottom. They stand up better)
1 lb ground turkey
1 head cauliflower
1 yellow onion diced
1 tbsp minced garlic
1 can organic diced tomatoes
1 can diced green chilies
1 tbsp cumin
1 tsp oregano
1 tbsp chili powder
1/2 tsp red chili flakes
salt & pepper to taste

Turn your oven on to broil.

In your frying pan cook onions and meat until done. About 10 minutes. Add your garlic, green chilies, diced tomatoes and all your spices (cumin, chili powder, red pepper flakes, oregano and S&P). In your food processor "rice" your cauliflower. Add this to the meat and cook on low for about 10-15 minutes to let the flavors make a delicious medley.

While your doing this your peppers should be in the oven roasting. Turn them every couple minutes to get a nice char, but don't burn them. You know like goldeny looking. So once the peppers are roasted to your liking take them out and cut the tops off. Hollow out all the seeds and stuff with your meat/cauli mixture.

Lastly, bake your stuffed peppers for about 25 minutes @ 350F to soften the peppers a little more. Let cool, and eat!
