Can you guess whose routine that is? No, its not mine. Ha! Rogue has a rough life. Well he sure thinks so. He switches positions like 25 times before he falls asleep. Frick! Just lay down! And not on my laptop! Yesterday Scott spent most of the day at home resting (he threw his back out) and that means he got to babysit the pup most of the day. I think about the end of the night he was puppy crazy. It happens. I don't blame him. But now he knows how I feel everyday. I think all I say is Rogue, No! Ha.
Fall is here and I am so excited! The crisp cool mornings are my favorite! I turned the A/C off and have had the windows open all weekend. Love it. This weekend was pretty uneventful. Saturday was our monthly paleo potluck for CrossFitGP. It was at Kurt and Barb's beach house. MAN! I could literally sit on the back patio and read a book for the rest of my life there. Just kidding, that is crazy talk, but it sounded good. The view was amazing, the house was beautiful! And the food was above and beyond, like usual! Good times :)
this was only 1/4 of the spread!
Sunday was a lazy day for sure. I went to lunch with my momma and sat by the river. It was super nice to hangout and chit chat with her for a bit, then came home, took a nap, watched a movie and relaxed. My life is boring lately. Ew. Time to step it up guys! Sorry!
So I made these little bites of heaven for the pot luck on Saturday. They were a hit! Sweet, salty, ewy guey and crunchy all on a little toothpick! Now that's impressive.
Bacon Wrapped Dates stuffed with Water Chestnuts
24 Medjool dates, pits removed
2 cans whole water chestnuts, rinsed
1 pkg uncured bacon
4 tbsp coconut aminos
2 tbsp raw honey
Preheat your oven to 350F
First off, take you water chestnuts and start soaking them in your coconut aminos. Set aside and start removing your pits from your dates. Once your all done with that put one water chestnut inside each date. Take your bacon and cut each piece in half and wrap the date up tightly in bacon. Poke with a toothpick and place on baking sheet. I covered mine in foil for easy cleanup. Bake at 350F for 20 minutes. Drizzle your raw honey over the bacon wrapped dates and put in oven on broil for 5-7 minutes. Remove, let cool (don't skimp on the cooling, I know someone who didn't wait and there mouth hates them) and enjoy!
