Zook Muffins with Frosting

MAN! Yesterdays WOD was a killer. Shankle this, shankle that. It was kinda fun though.

I shocked myself. I failed at clean part on set 5,  85# 3 times, gave it one last shot and bam, I did it. Silly me had the shrug going up to my ears but wouldn't drop under the bar. Why you ask? Cause my leg is broken. Not really but it feels like it. So I think my brain is trying to be easy on it. Go figure. I was SOOOOO tired last night after that wod. We put in Sherlock Holmes and I pretty much fell asleep after 10 minutes and woke up and watched the ending. Go figure. At least I can finally return it. I rented it like a week ago so it will probably be a $12 rental when its all said and done. Oh well. On a good note, Scott PR-ed his snatch. So did Mike! Way to go guys! The shankle was all new to us but heres a cool photo of Mike getting after it...


So last night we were trying to eat dinner on the patio. The flys are ridiculous right now. Just buzzing around landing on all our food, puking and pooping and re-eating it, or whatever it is that they do. Yuck. The dogs started barking like crazy, which is not a shocker. They do it all the time. So long story short there was someone at our door. I figured it was the kids on the bikes that dress all fancy. So I am sitting, waiting for Scott to come back and eat with me and then a killer bee gets all up in my bizz. I'm like okay bee, I will share a bite of my burger with you if you leave me alone, that's fine. He didn't want my burger, and if he did he didn't want me to have it. He was all angry and I got scared. Bees are so creepy! Eeeep! So I decided to move the dining situation inside. When I came in from the back door (haha) Scott's just sitting on the couch with some dude. First thing that came to my mind was oh geez, whats he signing us up for?! I should have answered the door and told this guy to fly a kite. Dangit. But I guess we got a good deal on some hopper dish thing. So that's good :))

Mass production of jerky going on in the Lookabaugh residence. Who wants some!? Let me know and I could bring you a little care package. The house smells like a big steak. Which is awesome! Heck yes it is. Who doesn't love steak? Nom nom! So I found my water bottle. It was in the freezer. Phew! Check out the ice sculpture.


So I made these cute little muffins the other night because I had an extremely large zook and didn't want it to go to waste. I could have made noodles from it, since that is the reason God made zucchinis. But one of the reasons I love zucchini is the delish bread and muffins. Well since my moms zook bread isn't paleo, let's make muffins! You could probably do a bread with this batter, BUT I am not fully confident that it would cook evenly. So I went with the safe route. I didnt stop there though, I needed frosting. And this frosting is heavenly. I could eat it by the spoonfuls. Who am I kidding? I did. Dangit.... I kinda indulged the other night making these. Hey its okay right? Sure. I hate the word sure. It means "No, I don't want to, or I don't like that idea, or you're stupid, but yeah whatever", it should be removed from the English language. Any who these muffins are paleo and delicious so you should make them. I took a plate full of these beauties to the gym and they got inhaled by my crossfit community.

Zook Muffins

3 cups grated zucchini
4 eggs
1/4 cup coconut oil
1/4 cup raw honey
1 cup walnuts (chopped)
1 1/2 cup almond meal
1/2 cup coconut flour
1 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
1 tsp pure vanilla extract
1 1/4 tsp baking soda
1/2 tsp salt

Preheat your oven to 350F. Grease your muffin tins with coconut oil or line them with cute muffin cups :))
Combine walnuts, almond meal, coconut flour, spices, baking soda and salt together in a small bowl.
Mix zook, honey, eggs, and melted coconut oil in a large mixing bowl. Add dry ingredients into the wet and mix until nicely blended.


Scoop mixture into prepared muffin pans and bake for 25 minutes if your using a mini muffin pan and 30 minutes if your using a regular sized muffin pan.


Frosting

1/2 cup walnuts
1/2 cup pecans
5 tbsp coconut butter
1/3 cup canned coconut milk
2 tsp pure vanilla extract
1/2 tsp cinnamon
10-12 dates (soaked in hot water for 5 minutes until soft then drain)

In your food processor mix nuts until a flour-ish consistency is formed. Add butter, milk, vanilla, cinnamon and dates. Puree until a pleasantly shiny texture is created. Taste test it, like I did. SOOOO AMAZING!!!!!!!!!! I even took Scott a spoonful. I was pretty proud of this frosting.


Place in a bowl and put in fridge for a bit so it thickens up.

Take muffins out of oven and let cool. Once they are cool, frost them puppies. Eat them all yourself or take them to all your peers to enjoy with you!




Recipe yields 36 mini muffins or 18 regular size muffins
