Scratch Sketti

Ohhhhh happy Friday! This made my belly soooo happy last night...


What's on my list today? Well I slept like cacaaa last night. Woke up in pain about 4:00am, and went downstairs and starting watching the movie Hot Chick to try and distract the pain. It worked for the most part. Started to feel a little better and went to the 8:30am class at the good ol' CrossfitGP. I was super excited about the wod today. Did pretty good considering my condition I guess. Gonna do a little shout out to Amy and Annie! WAY TO GO! You ladies killed it! Proud of you :)) So here it is...

Spend 15 minutes working double unders (I suck at these. I don't think I even got one, but I was so sweaty after doing this for 15 minutes. Jumping rope is a dang good workout.)

5×3 shoulder press getting heavier each set, rest 1 minute between sets (my 1 RM a month and a half ago was 65#)

Wall balls (#20/14)
KB swings (#55/35)
Sit Ups

It took me a bit to get it finished. My lower back decided to give me hell on the KB swings. But I did it rx-ed and got 65# on the shoulder press. As Atmosphere would say,
"Every day can't be the best day

I am going to go play at 12 with Katy. Yay! Glad to have the workout out of the way and the rest of the day to do whatever I want! Hoooolllllllllllllllllla girl! haha, I just love saying that. Did I say I am going to miss her so much?! Gosh dang her.

So the dried pineapple turned out efffing AMAZING. Seriously so good. SO SO SO SO SO SO good. I'm thinking about making some paleo snack packs. What do you think? Put like dried fruit, jerky, nuts and coconut in them? mmmmm....Give me some feedback. :))

So I made the Chocolate Cakes with the frosting from the Zook Muffins and it is straight up German Chocolate amazingness. HEAVEN! Took them down to the gym to share of course. And took some pictures of course :)) I want this cake on my birthday and I want to eat the whole thing. Put myself in a cake-coma! Ha!



Little tid-bits for all my frans :)

Scott must have read my post yesterday and told me he would eat the spaghetti squash.YAY! He is so sweet to me. I made a huge pot of spaghetti sauce, and it turned out AWESOME, just like my parents. Then baked the spaghetti squash and pigged out. This dinner totally satisfied my craving. I am a happy girl!

I had to show a picture of my little love muffin. This is Oliver. The other man in my life. He snuggled with my all morning. He never snuggles with me unless he knows I am sad or not feeling good. Crazy how smart dogs are.

So if your craving something comforting and delicious make this sketti sauce with either sketti squash OR zook noodles :) We are just about burnt out on zook noodles...

Sketti Sauce

1 lb grass fed ground beef
1 lb mild Italian pork
1 lg can organic no salt added diced tomatoes
2 - 15oz cans of organic no salt added tomato sauce
2 tbsp minced garlic
4 tbsp Italian seasoning
1 yellow onion chopped
1 tsp black pepper
1 tsp salt
1 tsp basil
1 pkg diced mushrooms (yuck, but Scott loves them)

Preheat oven to 325F

In a large saucepan cook both beef and pork with onion and garlic until done, about 8-10 minutes. Add your spices (Italian seasoning, black pepper, salt basil) and mix well. Add your cans of tomato sauce and diced tomatoes and cook on low to medium heat for 30-40 minutes. Let sit to cool and thicken a little bit.

While your sketti sauce is cooking, cut your squash into half and scoop out all the guts. Place face down on a cookie sheet covered in foil or parchment paper and cook for 20-25 minutes. Take out of oven let cool for 5 minutes or so. Take a fork and scrap against the grain to get your "noodles".



Get some noodles in a bowl and then top with this nom nom sauce. I hope you enjoy it as much as I did!
