Herb Buns

A little package came today...



Can you guess what just made this girls day! So happy it finally arrived. The stuff I have been kinda drinking since we ran out of the Progenex is gross. This stuff is amaze. Trust me.

It's Monday already?! Where does the time go? What a fun weekend though! This summer is flying through my fingertips. Its "cray"...ha! I spent a lot of time in the sun this weekend. I mean a lot. The pool day on Friday with Katy was awesome. We literally just laid out all day and relaxed. It was awesome. Then we went and saw the new movie "The Campaign", it was super funny, and wayyy crude. But funny. You should see it. There was a funny line that I tried to remember from it but I can't remember at the moment. Poop. Oh, and Katy got fried from the sun. I hope she put aloe and lotion on herself. Cause she was RED.

Any who, Saturdays wod was intense. It was long and then it was longer. But what a great workout. Everyone did awesome. It was almost 30 minutes of work, I am not really used to that so it was good that we did it. After the workout we came home, packed a lunch and headed back to the pool. Scott and myself laid out and floated around for a couple hours, ate some lunch and I did a dive. I don't know if any of you know this, but I cant dive. I think it has something to do with the fact that I cant do cartwheels or handstands and things like that. I'm just not a gymnast. And I don't like heights or being upside down. When I was just a little girl all awkward and what have you, I went to Merna's swim lessons out in Merlin. I think everyone was taught to swim by this lovely lady. My most vivid memory of her is her slimy skin from all the oil she slathered herself in. I seriously am amazed that she is still teaching swim lessons. Amazing. Okay, so back to the point, when we were in swim lessons we had to do a dive test through the hula hoop. I failed. I flopped on top of the hula hoop every darn time. I still got a ribbon, for the best belly flopper. I know you people are totally j right now. Its okay. I could show you my moves. But I tried a dive on Saturday and Scott said it looked pretty good! YAY! Baby steps progress.

Sunday I went on a spur of the moment rafting trip from Hogs to Galice and it was super fun! I got in a war with a boat of army guys with one squirt gun on my team. Nice right? Ha! But needless to say I think I kicked their asses. Three days in the sun wore me out! I didn't want to get off the couch last night. I am happy to say I am not sun burnt. But today I am playing catch up on the house work. Laundry out my ears! I cleaned the garage up, I was thinking about pulling weeds too. The weeds are getting a little out of control. So is the garden! Check out what Scott and I picked last night.


So Friday I made the pulled pork with zesty BBQ sauce and we "pigged" out on that. I made these buns to go with it, cause I felt like buns would be delicious with some saucy pulled pork. What do ya know! I was right. I think Scott's "always rightness" is rubbing off on me. He better watch out :))

Herb Buns

1 1/2 cups almond flour
2 tbsp coconut flour
2 tbsp fresh rosemary, chopped
1/4 tsp salt
1 1/2 tsp baking soda
5 eggs
1/4 cup bacon grease (or coconut oil, melted)
1 tbsp apple cider vinegar
1/2 tbsp honey

Preheat your oven to 350F

In a medium bowl mix all dry ingredients then add your eggs, bacon grease, vinegar and honey. In a whoopie pan grease with spray coconut oil and put about a ice cream scoop in each, if you do not have a whoopie pie pan just use a cookie sheet and put 6 scoops on about 2" apart from each other. Bake for about 15-20 minutes until beautifully golden. Remove from oven, let cool for about 5 minutes and serve.



We dumped a bunch of pulled pork on top a a bun. But I bet these would be great for burgers too!
