Sundried Tomato Grilled Chicken

There is food coming out of my ears. No joke. I made fresh salsa, pulled pork, homemade bbq sauce, zucchini bread, cinny buns, chocolate donuts and then made dinner for us last night. Kept it simple with ground turkey taco salad but still. Sweet baby Jesus...ITS THE DAY! We leave for Dave Matthews today! AHHHH. I have been waiting alllllll summer for this camping trip. I am beside myself in excitement!

All the food prep is done, and we are packed, just need to load up the man van. Oh and Scott needs to get his wod in for the day. Guess what?! I am shooting for my hip flexor to be healed up enough to get my butt back in the gym Tuesday. Cross your fingers and send me positive thoughts please! I cant wait to get my booty back in there and throw some weight around and sweat in agony. I'm getting all soft and shit. Ew.

I know milk isn't paleo. But I have organic whole milk in my coffee right now and it is heavenly. Totally adds a delicious flavor to it. MMM. We got a french press that makes 8 cups for the trip this weekend. Hail Allah! Cause Scott will put down a whole pot of coffee and I drink a couple cups. The single serving french press doesn't cut it.

I don't have a recipe with pictures today so I will give you a couple ideas. One of our breakfast this weekend is going to be french toast. Yeah, I said it. FRENCH TOAST! I made a beautiful loaf of Zucchini Bread and we are going to coat it in eggs and fry it up. I will get some pictures of it. I don't see why it wouldn't work out and be tasty. So if you dare to try it. Do it! The recipe for the Zucchini Bread is right here....

Zucchini Banana But Bread

1 1/2 cups almond flour
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 cup grated zucchini water squeezed out
3 eggs
2 tbsp raw honey
1 banana mashed
1 cup chopped walnuts
1 tbsp coconut oil melted

Preheat your oven to 350F, bake for 30-35 minutes. Let cool for 15 minutes or so and remove from bread pan. Continue cooling on rack.


This next recipe is from coach Anna at CrossFit GP. She went to culinary school and is a chef! I haven't had the chance to make this either BUT it does sound delicious and very summery. So if you want to try it out, here it is!


Sundried Tomato Grilled Chicken

1/2 cup red wine
1/2 cup sun dried tomatoes packed in oil, drained
1/4 cup fresh basil leaves
3 tbsp olive oil
4 cloves garlic, chopped
2 tsp fresh ground black pepper
A few sprigs of parsley (optional)
4 small chicken breasts

Combine the wine, tomatoes, basil, olive oil, garlic, pepper, and salt in a food processor and mix until smooth. Add the blend with the chicken to a zip lock or storage container. Make sure the chicken is covered in the sauce. Marinate overnight in the refrigerator.
Grill about 20-30 minutes or until they reach an internal temperature of 160F.
Garnish with fresh Italian parsley. You can also use dried tomatoes and reconstitute them in oil over night. Make sure you use a merlot or other dry red wine.


Doesn't that sound amazing?! I think so. I need to make that next week. Yep I'm doing it. Then I will give you some late notice photos. Better late then never right?!

Asian Style Chicken Lettuce Wraps

So tomorrow is the day. We set forth on our journey to go camp for 4 days. Its going to be so much flipping fun. 10 hour car ride with my love in his man van. When I first started dating Scott he had a Nissan X-Terra, then he traded it in on this van. It's a 16 passenger Chevy Express. White. It cracks me up. But in reality its super convenient for things like camping and hauling stuff. He made a nice bed in the back and took the seats out so when we camp we have 6 inches of foam pad to sleep on. Lets just say, its really practical for activities. Who cares that he drives a creepy candy van?! Ha.

So today I slept in on accident. Don't judge me. I got caught though. Pretty funny. Scott came home at like 9am to grab eggs. I was still in bed! I'm going to blame it on the Kava. I haven't slept good lately AT ALL. I wake up every morning around 3:30am. Isn't there something superstitious about that? I thought there was. But anyways, Scott suggested I hit up the Kava before bed. So I did. I took an extra 30 drops hoping it would just knock me out. It didn't affect me like I wanted it to. I still laid there for ever till I drifted off.

Yesterday I stopped by the drop the girls off and watched everyone for a bit. They did 7x 1 min amrap of ground to overhead with a 1 minute rest in between. Looked so fun. I miss lifting weights. SOOOOO BAD! You just feel like a badass, ya know? I know you know what I am talking about. You just get some sort of empowerment feeling and its awesome. I was watching Javonna the whole time and helping her count her reps. She has great form! Love that gal. She's the sweetest.

So Monday I took the chitlens down to the Applegate Fish Hatchery Park. I had never been there before. There was no one there and it was gorgeous! I took some photos of them swimming and what not. They are so cute!

I started the food prep last night. I made a huge batch of pulled pork with homemade BBQ sauce. Fresh salsa with garden tomatoes and peppers, and this morning I made donuts. I need to run to the store for more eggs and a few other things then more food prep here I come!

We ate these lettuce wraps with the cauliflower fried "rice" that I have previously posted. I thought it was amazing!!

Asian Style Chicken Lettuce Wraps

2 lbs organic chicken thighs
2 tbsp Sesame Oil
5 tbsp coconut aminos
4 garlic cloves minced
1 tsp raw honey
2 green onions chopped
1 ½ tsp ground ginger
1 tbsp white wine vinegar
1 cup green cabbage
1 can diced green chiles
1 yellow onion sliced
1 green bell pepper sliced
1 can sliced water chestnuts
¼ cup carrots shredded
salt & pepper to taste
romaine lettuce or butter lettuce for wraps

in frying pan heat up your sesame oil and add chicken. Cook for a couple minutes and add onion, garlic and peppers. Cook on medium for 5 minutes then add your remaining ingredients, coconut aminos, honey, chopped green onions, ginger, vinegar, water chestnuts and salt and pepper to taste.


 
Cook until chicken it done, but veggies are still a little crisp.


To make your lettuce wrap take lettuce, add a scoop of chicken goodness and top with chopped cabbage and shredded carrots.

Beefy Chili & Cornbread

So I didn't know what to call this chili, but its really meaty and I only used beef. So beefy seemed fitting. I have been wanting chili, and usually Scott is the chili maker in the house. He has an AMAZING white chili. But I tried to be a BA like Scott and I think I succeeded. This chili totally hit the spot.

Check out this chick, she was one of my favorites to watch at the games this weekend. A little beast you could say! BA!

My hip is about 10% better I'd say. That's good right!? I am stoked about it. I'm thinking I will continue to just completely leave it alone and do as little as possible with it then when we get back from DAVE MATTHEWS BAND I will start working out again. Slowly. In the functional class maybe. I am going to be a wimp. It's going to suck. But I am just soooo ready to be back in the gym. Mentally I finally came to terms with that I cant workout and there is no reason to get mad about it. I took a chill pill you could say.

So you noticed I yelled DAVE MATTHEWS BAND!!??! I am getting sooooo excited. We leave Thursday. 10 hour drive to the most beautiful George, Washington to the Gorge Amphitheater. Its said to be the best amphitheater in the US. I agree. But my opinion shouldn't be valued because I havent been to many. Ha!! So many people talk trash on Dave Matthews Band. Its funny to me. Like a lot of our friends act like Scott isn't going to have fun. Dave Matthews Band puts on an amazing concert. And my advice is you cant knock it to you experience it. I made our shopping list last night and menu for food. Going to prep food ALL day tomorrow. Its on like donkey kong. This photo is of my sister and I at the concert last year!

 
So a commercial just came on for the new JIF Hazelnut spread. That's just like Nutella right? Scott despises Nutella. I am pretty sure if I have it in the house he would suit up in a bio hazard outfit to remove it. I wonder if I could trick him with the JIF Hazelnut. I don't even know if I like it. But I want to try it just because he hates it so much.

I am watching Live with Kelly right now. They have puppies. Reallllly cute little puppies. Have I told you guys that I am trying to talk Scott into having a canine child with me? I have him convinced enough that he chose a breed. We compromised on a German Shorthair Pointer. So cute. Ahhhh, in a perfect world a little puppy would stumble through the front door with a big blue bow around his neck. I already named him. Rogue. So perfect right? Cause we live in the Rogue Valley AND Rogue is an awesome brand in the CrossFit world. BOOM!

Craving chili?? Make this, its delicious. That is all.

Beefy Chili

1 lb lean ground beef
1 large steak cut into chunks
1 large can organic crushed tomatoes/ no salt added
1 can diced tomatoes no salt added
1 can diced green chilies
1/2 can diced jalapeno
2 yellow onions diced
1 cup organic beef broth
3 cloves garlic minced
2 tsp garlic powder
1 tsp ground cinnamon
2 tbs ground cumin
3-4 tbs chili powder
olive oil

In your stew pot heat olive oil and brown steak chunks. Add garlic, onion and ground beef. Cook until meat it done. Add all of the remaining ingredients. Stir and cook on medium for about an hour. The longer the better! You could also through this in your slow cooker in the morning if you have time. While your chili is cooking all the flavors together, get started on your cornbread.

Cornbread Muffins

4 eggs
1 cup water
2 tbsp of apple cider vinegar
1/2 cup of coconut flour
1/2 tsp of garlic powder
1/4 cup of coconut oil melted
1/4 tsp salt
1/2 tsp baking soda
 
Preheat oven to 350F
 
Combine all ingredients and stir until well incorporated. Fill your paper liners in your cupcake pan and cook for 25 minutes.


 
Let cool and crumble into your chili. Its pretty dang good!

Basil & Prosciutto Stuffed Chicken Breast

Back to reality!

We had a great time this weekend. Man, I love the weather in Bend. I love the level of class in Bend, I think I just love Bend. It could use some more trees but other then that its perfect! Like I had mentioned last week we headed up to the Oregon Crossfit Games to cheer on our friend Sean. He did awesome! For only training for 3 months, I give him a gold star. Not to be a snob at all but going to watch this event after watching the CrossFit Games in LA was a HUGE difference. I was really surprised at the level of knowledge that alot of the athletes had. I would say a good 50% of them didn't know how to do most of the lifts. But hey we are all out there for fun right?! Shout out to all the athletes that competed last weekend for giving it your all and kicking some ass.

So there was a team event with a snatch/clean ladder. Holy hell, this teams name was "Size Matters", and it showed. These women were probably around 6 ft tall and monsters. One of the girls, her name was Kelsey walked through the ladder doing power cleans the whole time. All the way to 235#. I am sure if there was more she would have crushed that too. We found out the next day that was a 30# PR for her. CRAZZY awesome! Have you guys heard of Kill Cliff - Sports Recovery Drink? Go check it out! Like their Facebook page. Here is Baker and his lady Kelsey that crushed that 235# clean!


Super awesome product and cool people. They gave out a ton of their drinks at the games. I even got a shirt, it says "Nectar of the WODS". Pretty neat huh?  So Sunday I went to take a picture of these two ladies to show you people but I'm retarded and left the SD card in my laptop. Sorry. I thought I took a photo, but it didn't save. My bad, so I got these off the net so you could see these amazing athletes!

This week is going to be so busy. AHH!! Today I get to hangout with my 3 favorite kids though. Speaking of which I need to get ready.

We got home from our little trip last night stopped by the store and made these delicious chicken breasts. It was funny because we couldn't decide on what we wanted to eat for dinner, but we both knew we wanted something amazing. Sucks cause no matter where we eat, it's never as good as homemade cooking. Although we carbed out Saturday night on some sushi and it was gooooood. Okay here it is, simple and tasty. MMMM!!


Basil & Prosciutto Stuffed Chicken Breast

4 Chicken Breasts
2 handfuls of fresh basil leaves
3 tbsp minced garlic
1 yellow onion sliced
1 pkg diced Prosciutto
1 tbsp EVOO
salt & pepper to taste

Preheat your oven to 375F

Take your chicken breast and slice down the middle then fillet the sides out a little to make a nice hole to stuff. Take basil leaves and lay into hole made in chicken. Put a nice spoonful of garlic on top of basil leaves. Lastly, get your diced prosciutto in there. Take tooth picks and close up the hole a little bit, mine were so stuffed this was difficult. Put stuffed chicken breast into your baking dish and place your sliced onion around the breasts, then drizzle EVOO over the top. Salt & pepper and bake for 30 minutes.



Take out of your oven and gobble it up!

This recipe was so easy to make and it tastes like its super complex. YUM!!

8 Layer Lasagna

So I was wearing a pair of cheap earrings last week and my ear holes got irritated. I let them be for about a week cause they still felt itchy and kinda scabby, gross I know. So anyways, I tried to put a pair on today and I cant find the back hole to the left ear. WTH! I seriously was pushing so hard just trying to make a new hole cause the old one cannot be found. So annoying.

So I am sitting here patiently waiting for Scott to get done with his workout at the gym. I cant wait to hit the road! Yeeeahhhh! I love road trips. And I love road trips with Scott even more. So the results from that equation are obviously awesome. I guess ZZ Top is playing in Bend tonight. My girl Tosh wants to go check it out. We shall see what we decide to do. I want a delicious dinner, I do know that. I am going to try my hardest this weekend to stay on the no sugar/nuts kick I am on. I have been doing so good! :))

I can honestly say that I am so stoked that this week is over. It has been hellish. Good news is, chiropractor said I need to start up with some light exercising for my hip. He gave me some to do over the weekend. I am going to look like a 80 year old doing jazzercise or something but hey, it's all in good fun right!? I am supposed to not walk with a limp and try as hard as I can to walk normal even if it hurts he said. So I'll keep you posted on how that goes.

Yesterday we celebrated my Dad's birthday since I couldn't spend it with him today. HAPPY BIRTHDAY DAD!! We went over there last night for dinner and had BBQ-ed chicken wings and fresh salad and I brought some lasagna I made. This lasagna was super good! All the non-paleo in my family enjoyed it to, so that's great!


My little sister's puppy is so funny. He is so hyper he doesn't even know how to contain himself. Poor thing, just all puppy. Too cute for his own good, I would have tried to take a picture but there was no way that was happening unless you wanted to see a blurr running. While I was sitting on the deck he decided to jump on top of my back while I wasn't looking. Dooby literally catapulted himself onto my back fully scratching and scraping all of my exposed skin. It felt amazing, not. But I love him anyway.

If you want to impress the non-paleo with a unique dish, try this lasagna out. It take a little preparation, but well worth it!

8 Layer Lasagna

for the meat sauce:
1 lb organic ground beef
1 lb Italian sausage
1 lg can crushed tomato - no salt added/organic
4 tbsp Italian seasoning
2 tbsp minced garlic
1 yellow onion chopped
salt & pepper to taste

for the layers:
1 parsnip sliced into thin rings (saute in coconut oil for 2-5 minutes to soften)
1 eggplant sliced into thin discs (saute in coconut oil for 2-5 minutes to soften)
1 zucchini sliced into wide noodles
1 bunch fresh basil leaves
2 cups fresh spinach
4 button mushrooms (I did not put in because I don't love them, but it would be good if you loved them)

Preheat your oven to 375F

In your baking dish or dishes ( I cooked 2 separate meals) start layering this stuff!
Here are the layers in order-
1- parsnips
2- meat sauce
3- eggplant
4- basil
5- spinach
6- mushrooms
7- meat sauce
8- zucchini

 
 
 
 
 
Continue the layering until you have almost reached the top of the pan. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15 minutes. I put mine on broil for the last 5 minutes to crisp up the top a little. You don't have to do that if you don't want to.

Stuffed Chicken


So this was my first week with my new little side job. I am helping out some friends from the gym with whatever they need help with. It's awesome because I have been bored and this gives me something to do on Monday and Wednesday's. Not to mention that their children are so great. So smart, so fun, and all three sooooo different. I have a feeling these little chitlens are going to be teaching me a thing or two, and I can't wait! Two girls and a boy...So super cute!

 
So the no sugar thing is going great so far. Haven't been craving it too bad. Yesterday I had a sickness feeling overwhelm me though. I thought I was going to spew everywhere. I didn't ever figure out if it was a low blood sugar thing or if it was the fact that I took 4 grams of fish oil on an empty stomach with a lot of water in my belly. Either way, whatever it was, it really sucked. I felt nauseous for like 2 hours. But then I felt better and went and picked blackberries. Do you know how hard it is to not eat the blackberries that your picking?! Its pretty hard. And then to torture myself even further, today I made mini cobblers. I made Scott try it as soon as he got home from work because it was killing me. I didn't know if they were going to be good or not! Not being able to taste test your creations suck. If only my stupid hip would get better...


I found out that I get really jealous that I cant workout and all you people can. It sucks. I feel like I am just sitting here turning into a chubby bunny on the couch watching "Say yes to the dress, Bridesmaids". I really am watching that right now. It's pretty stupid. But we have no good channels, and the food channel that I do love, has nothing on it.

So we leave Friday for the Oregon CrossFit Games 2012! OHHH YEAH! I am so excited. A local, Sean Holtzclaw is competing and we are going to root him on. He's going to do great. Scott calls him "Swoltzclaw". Pretty funny. AND I get to see my long lost friend Natosha. It's going to be a good weekend! I cant wait!

I made this dinner last weekend. The day that Scott and I spent most of our afternoon in the kitchen. It was heavenly. Absolutely amazing. Reminded me of Thanksgiving. It was savory, and made my mouth salivate... to say the least.

Stuffed Chicken

1 whole chicken
1 package of uncured bacon
1 red onion sliced
1/2 head of green cabbage chopped
1 sprig of rosemary
1 lemon
6 cloves of garlic, minced
1 tbsp salt
1 tsp black pepper

Preheat oven to 400F

Remove guts of chicken (this was disgusting, I did NOT want to do it) Place in a 9x12 baking dish.

 


Sliced lemon into 4 wedges, sprinkle salt & pepper and rosemary into the cavity of the chicken. Stuff lemon wedges, garlic and 1/2 of the sliced onion in there as well. Dry the top of the chicken with a paper towel until not wet, at all. Sprinkle the remaining salt & pepper over the top of the chicken. Take the bacon and lay across the chicken so that NO skin is exposed. Lastly take the chopped cabbage and remaining onion and place around the chicken in the baking dish.

Bake for 1 1/2 hrs uncovered. Every 30 minutes or so check on it and stir the cabbage and onions around so it doesn't burn.

Let cool and dig it! I found out that I need to learn how to carve a bird. BAD! I need to ask my dad for a lesson...

Zucchini Banana Nut Bread

So this week has been a intense whirlwind of craziness. I apologize for no posts yet but I will explain. You already know I will explain it, so I guess that is a forewarning :)

So the weekend was mellow and relaxing. We cooked all day Saturday after a brutal wod, and then Sunday relaxed by a gorgeous pool. I ate entirely too much watermelon and pigged out on tri-tip and strawberry spinach salad. Then we went to dinner at Sean and Amy's and had fish tacos. Also amazing. So to sum it all up we layed around an ate food Sunday. It was awesome.

As you know my hip has been bothering me for a good week now probably 2. I have been getting a lot of helpful stretch ideas and counseling from all the great coaches at CrossfitGP, but it just hasn't gotten any better. So I visited the chiropractor on Friday. He said it was my hip flexors. So he did some work on me and throughout the weekend it DID NOT get any better. I would say worse. So went back today and he said its a strain/ small tear. I told you guys it freakin hurts. So now I have to take time off of working out until its healed. Gotta nurse it back to health. Sucks but in the big picture it's gonna be okay. Thank goodness I am doing a no sugar no nuts thing right now. Otherwise I might blow up and become a fluffy chubby bunny. No paleo treats made by yours truly this week.
Last night I did my very first road bike ride. It was sooo fun! I always thought those people were crazy. But I can see why they do it. CAUSE its fun DUHHH!!! Amy asked me to go and her husband ever so kindly let me borrow his oh so professional bike and it was awesome. I got a picture, I look like a geek but I don't care. We did a 15 ride. That seems pretty dang good if you ask me. I climbed a pretty good size hill too.


Its blackberry picking time people!! Ohhhh yeah. I see blackberry treats in my future, and yours too! Tomorrow evening we are going picking. Taking the men with us and that way we get twice as many berries in half the time. Another awesome advantage that I can add to this berry picking trip is that I cant eat them as I pick them. That's a good thing, more produce to take home.

So last weekend I made this zucchini bread and it is seriously so yummy and delicious. So moist and perfect. I made the frosting from the Zoom Muffins and wasn't shy with the amount either. It was heaven. I took the leftovers to Sean and Scott at work on Monday so I wasn't tempted on my no sugar reggi.




Zucchini Banana But Bread

1 1/2 cups almond flour
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 cup grated zucchini water squeezed out
3 eggs
2 tbsp raw honey
1 banana mashed
1 cup chopped walnuts
1 tbsp coconut oil melted


Preheat your oven to 350F

In a bread pan or a "upside down cake pan" with the cool divits, spray with your handy dandy BEST INVENTION EVER coconut oil.

Mix all dry ingredients in a small bowl and wet in another medium sized bowl. Add your dry to your wet and make sure all your ingredients are nicely incorporated. Scoop into your pan of choice and back for about 30-32 minutes. Until a toothpick comes out clean.

Let cook for about 10 minutes and place on cooling rack to cool completely. Eat as is or add that delicious frosting. Or Just keep in simple with some coconut butter, if you want to get all crazy on it put some pasteurized butter on it. I bet that's tasty.

But you should make this. Your taste buds would love you. For at least....24 hours.

Fried Cauli "Rice"

Guess what I am doing?!?!?! Icing my hip-ola. 15 minutes on 30 minutes off. 3 rounds. Let's see if it works. I hope it does! I have just been limping around like a gimp. I had to modify the wod yesterday too. That sucked. I mean I didn't have to do the snatch/OHS work which I'm not crying about but I did have to do a 5x5 strict shoulder press. Those are hard. But I was glad to still get my sweat on. But then again who wouldn't be sweating at 4:30 pm and it being 105F outside with fires surrounding you so your lungs cant receive any oxygen?! Yeah, that's what I thought. I heard a couple of the guys say "its like running around in a hair dryer" and they are 100% correct.

Want to know something funny? I think I lick my lips when I workout. It must be my way of concentrating or something. My lips are on fire and chapped today. What a retard.

So yesterday as I had mentioned, I literally spent the entire day in the kitchen. I made dinner for our friends, made lunch for my man, made BBQ sauce for a friend, and then worked out then came home and made dinner for us and Stu and then Scott wanted cookies. I made some "oatmeal-less" cookies the other night but I didn't write down any of the amounts of ingredients and I don't know how to duplicate them. So those are what he wanted and I tried but they weren't the same. They were still yummy, but different then before. That teaches me to write EVERY thing down as I go.

We might go hike Crater Lake this weekend. Just a day thing Sunday. Kurt (a super cool guy at the gym) said you can hike down to the water and jump in. Sounds warm.....NOT. Not to mention I don't like to jump off of things. I get scared. I will do it to be cool, but I really don't enjoy it. I get all panicked. Its dumb I know. My best friend just throws back flips and front flips. Shes a BA. She does stuff for both of us. Ha! Anyways, it should be fun if that happens. If that doesn't happen we are going to enjoy a pool day out in Takilma. I love pool days. I can work on getting a shade darker. If that's possible.
I think this rice tastes super delicious. And I haven't had fried rice in ages but it reminds me of it and it satisfied my craving. So in my book, it was awesome. I made it with Asian Chicken Lettuce Wraps. I'll get you the recipe soon, sheesh. Like Monday. Or Tuesday. Ill probably have a treat up Monday. I don't know. Ill wing it. That sounds more fun. Keep you people guessing. Waiting by your computers....ha! I'm kidding, but it'd be kinda cool if you did. I would feel important.

Fried Cauli "Rice"

1 head of Cauliflower, riced
2 tbsp sesame oil
4 green onions, chopped
4 tbsp coconut aminos
1 can water chestnuts, chopped
2 eggs
4 cloves garlic, minced
1 tsp chili flakes
½ white onion
salt & pepper to taste

In your frying pan heat up your sesame oil and cook onions and garlic until onions start turning translucent, about 5 minutes. Add your riced cauli and let brown a little. Next add your green onions, water chestnuts, coconut aminos and salt & pepper. Cook for about 7 minutes, then split the sea of cauli rice and add your eggs. Fry those chicken eggs in the middle then stir everything together until your satisfied with your creation. Let cook for another 5-10 minutes and serve!
We ate this with the lettuce wraps and fresh green salad. It was delicious.

Little of this, little of that :))


And it begins. I have been cooking since 8 this morning. Whew! I made a batch of BBQ sauce, some hamburger buns and starting prepping for dinner. For dinner I am making Asian inspired lettuce chicken wraps and fried cauli rice. MMMM... Just call me Susie.

The potluck last night turned out awesome for Katy. A ton of people showed up and the food was nothing less from AMAZING. I can't believe how awesome the spread was. We had stuff chicken breast with pesto, some sort of sausage dogs, pulled pork, carrot & date salad, sweet potato fries with a delish gauc spread, sweet potato salad, chicken sausage bites, my mini cheesecakes, apple pie, grilled peaches, fresh fruit trays, fresh garden veggies and I think that was it. And this was all 100% paleo. SERIOUSLY??!?! So good. Everyone really did a great job. I was impressed! I was so full afterwards. I think its safe to say that CrossfitGP has the best potlucks I have ever been to.


So the other day I was watching videos on CrossFit Journal about nutrition. CrossFit trainer E.C. Synkowski is a genius! I watched all 5 videos. You should too. Very informative. Anyways, she talks about paleo of course and zone, and our bodies and how they digest things. I learned a lot! So one thing I learned was all these dry roasted unsalted nuts that we eat from the bulk section are usually roasted in canola oil. EW. What in the H!! I had no idea. So now we are going to start roasting our own nuts. I was going to go simple for the first round and do coconut oil and salt. BUUUTTT my sweet tooth decided to go another direction. I did this...


Sweet Nuts

1/3 cup water
1 tbsp pure maple syrup Grade A or B
1 tbsp raw honey
1 tsp cinnamon
teeny pinch of clove

Mix those ingredients together and toss your desired nuts in sauce (Stop it, get your mind out of the gutter). Bake at 300F for 15 minutes and vvvwwwwaaaahhhla!

They were so good. I made Katy try them and she loved them, I also sent Scott to work with a jar of them. He came home and said "Why do you send me to work with stuff like that?" haha...I love it.

This recipe is from Celena Dwyer, she is a member at CrossfitGP. She wanted to share this recipe with everyone. I don't have any picture because I haven't had a chance to make it yet. But here is the recipe! It sounds amazing! I love soups and stews. I have been on a soup kick myself lately :))

Crock pot Chicken Stew

2 lbs chicken breast
1/2 cup organic, no MSG, chicken broth
1 can no salt added diced tomatoes
1 yellow onion – chunks or slices or whatever your preference is
2 cloves garlic minced
2 tsp cumin
1 tsp garlic powder
1 tsp coriander
1-2 bay leaves
1 tsp oregano
1 tsp paprika
1/4 tsp cayenne (optional)
1 tsp salt
Fresh ground pepper to taste

Cook in crock pot on high until the chicken is easily shreddable, a few hours is good. Shred chicken and serve.
Yum yum!

Did I tell you guys that I got a pull up bar? It's one of those iron gym doorway things. Been working on my negatives and my elbow pits HURT. That means its working right?! Yep. I'll be the pull up princess in no time. Ha! Don't worry. You will all know the day I get one unassisted pull up. I will be celebrating.

I am getting so excited for the next few weekends. We have had 3 rest weekends and I am getting bored. Time to get back out there and do some stuff! Yep! We have a busy couple weeks ahead of us! The first on the agenda is the Oregon CrossFit games. August 25 & 26th we are going to watch a local friend Sean compete. It's gonna be awesome. I absolutely LOVE watching people crossfit. It's awesome. And Bend, OR is like my dream. I love it there. AND my friend Tosh lives there so hopefully I will get to see her at some point.

Paleo Donuts

Is it donuts or doughnuts? Either way I think it looks better as donuts. Its shorter and cuter.


I failed at getting a recipe up yesterday because I was on my death bed. I'M SORRY. I almost would have rather died then have to deal with the pain I went through. Okay I didn't mean that, I would never rather die, BUT a tranquilizer would have been nice. I got my root canal done and then laid on the couch and moaned and groaned all night. So much fun!

There has got to be a fire brewing around here somewhere. Its like amber outside, even first thing in the am. I let the dogs out to potty this morning and there was an extremely loud heli above my head. Hopefully taking water to the flames.

We got a tire. Our friend works at Les Schwab and he delivered it the other day. So awesome. I flipped it once just to make sure I was capable. And I was. It will be so fun. I'm thinking Sunday morning me and my man might get our tire wod on. Ohhhh yeah!

Live with Kelly is seriously such a funny show. I laugh every morning at her She's awesome. and the size of my pinky toe. I'm going to paint my footsies today.

Today is a sad day, it's coach Katy's last day at CrossfitGP. She is moving back to her hometown. We are all going to miss her so much. She really is one of the reasons I love crossfit so much. She mostly coaches the functional fitness class and that's where everyone starts out who is brand new. She makes the class super fun and she is very informative and truly improves every ones skill levels. I know that I am very thankful to have had her there to help me grow to where I am today.

So enough mushy crap, today after the 5:30 class we are having a going away potluck party for Katy. I asked her if she could eat anything in the world what she would eat. Her answer was ice cream. So I said okay, second choice, she said fajitas. (Someone else is already bringing meat) So then I said okay, scratch that.What do you want me to make you for you going away party. We came to an agreement of cheesecake. YUMMM. If it turns out good, I will put the recipe up this week.

So here is the donuts that I made last weekend. They turned out awesome and tasted a lot like donuts! You could top them with virtually anything, nuts, chocolate chips, coconut, or cinnamon.

Chocolate Coconut Donuts

10 medjool dates, pitted
1 tbsp vanilla extract
6 eggs
½ cup coconut flour
½ tsp ground cinnamon
¼ tsp salt
¼ tsp baking soda
1/3 cup cacao powder
½ cup coconut oil, melted

Dark Chocolate, melted (optional)

Preheat oven to 350F 
Generously grease a donut pan with coconut oil.
Place the pitted dates with 1 tablespoon of water in a heat resistant bowl and microwave on high for 30 seconds. Remove and add an additional tbsp of water and mash the dates into a paste.
In the bowl of a food processor add date paste, vanilla extract, and eggs. Process mixture to combine. Add coconut flour, cinnamon, salt, baking soda, cacao powder, and melted coconut oil to the bowl of the food processor and mix until all ingredients are mixed well.

Fill the doughnut pan circles about 2-3 of the way full with batter. Bake for 15 to 20 minutes or until a toothpick inserted comes out clean. Remove from oven and cool on a wire rack.
Carefully remove doughnuts from the pan and continue to cool.

Melt 1 bag of Enjoy Life chips and 1/2 cup coconut butter with a tsp vanilla. Dip donuts into chocolate mixture and top with whatever toppings you'd like. I did mine in chopped almonds, chocolate chips and coconut shavings.




Let set and enjoy!
