Herb Buns

A little package came today...



Can you guess what just made this girls day! So happy it finally arrived. The stuff I have been kinda drinking since we ran out of the Progenex is gross. This stuff is amaze. Trust me.

It's Monday already?! Where does the time go? What a fun weekend though! This summer is flying through my fingertips. Its "cray"...ha! I spent a lot of time in the sun this weekend. I mean a lot. The pool day on Friday with Katy was awesome. We literally just laid out all day and relaxed. It was awesome. Then we went and saw the new movie "The Campaign", it was super funny, and wayyy crude. But funny. You should see it. There was a funny line that I tried to remember from it but I can't remember at the moment. Poop. Oh, and Katy got fried from the sun. I hope she put aloe and lotion on herself. Cause she was RED.

Any who, Saturdays wod was intense. It was long and then it was longer. But what a great workout. Everyone did awesome. It was almost 30 minutes of work, I am not really used to that so it was good that we did it. After the workout we came home, packed a lunch and headed back to the pool. Scott and myself laid out and floated around for a couple hours, ate some lunch and I did a dive. I don't know if any of you know this, but I cant dive. I think it has something to do with the fact that I cant do cartwheels or handstands and things like that. I'm just not a gymnast. And I don't like heights or being upside down. When I was just a little girl all awkward and what have you, I went to Merna's swim lessons out in Merlin. I think everyone was taught to swim by this lovely lady. My most vivid memory of her is her slimy skin from all the oil she slathered herself in. I seriously am amazed that she is still teaching swim lessons. Amazing. Okay, so back to the point, when we were in swim lessons we had to do a dive test through the hula hoop. I failed. I flopped on top of the hula hoop every darn time. I still got a ribbon, for the best belly flopper. I know you people are totally j right now. Its okay. I could show you my moves. But I tried a dive on Saturday and Scott said it looked pretty good! YAY! Baby steps progress.

Sunday I went on a spur of the moment rafting trip from Hogs to Galice and it was super fun! I got in a war with a boat of army guys with one squirt gun on my team. Nice right? Ha! But needless to say I think I kicked their asses. Three days in the sun wore me out! I didn't want to get off the couch last night. I am happy to say I am not sun burnt. But today I am playing catch up on the house work. Laundry out my ears! I cleaned the garage up, I was thinking about pulling weeds too. The weeds are getting a little out of control. So is the garden! Check out what Scott and I picked last night.


So Friday I made the pulled pork with zesty BBQ sauce and we "pigged" out on that. I made these buns to go with it, cause I felt like buns would be delicious with some saucy pulled pork. What do ya know! I was right. I think Scott's "always rightness" is rubbing off on me. He better watch out :))

Herb Buns

1 1/2 cups almond flour
2 tbsp coconut flour
2 tbsp fresh rosemary, chopped
1/4 tsp salt
1 1/2 tsp baking soda
5 eggs
1/4 cup bacon grease (or coconut oil, melted)
1 tbsp apple cider vinegar
1/2 tbsp honey

Preheat your oven to 350F

In a medium bowl mix all dry ingredients then add your eggs, bacon grease, vinegar and honey. In a whoopie pan grease with spray coconut oil and put about a ice cream scoop in each, if you do not have a whoopie pie pan just use a cookie sheet and put 6 scoops on about 2" apart from each other. Bake for about 15-20 minutes until beautifully golden. Remove from oven, let cool for about 5 minutes and serve.



We dumped a bunch of pulled pork on top a a bun. But I bet these would be great for burgers too!

Scratch Sketti

Ohhhhh happy Friday! This made my belly soooo happy last night...


What's on my list today? Well I slept like cacaaa last night. Woke up in pain about 4:00am, and went downstairs and starting watching the movie Hot Chick to try and distract the pain. It worked for the most part. Started to feel a little better and went to the 8:30am class at the good ol' CrossfitGP. I was super excited about the wod today. Did pretty good considering my condition I guess. Gonna do a little shout out to Amy and Annie! WAY TO GO! You ladies killed it! Proud of you :)) So here it is...

Spend 15 minutes working double unders (I suck at these. I don't think I even got one, but I was so sweaty after doing this for 15 minutes. Jumping rope is a dang good workout.)

It took me a bit to get it finished. My lower back decided to give me hell on the KB swings. But I did it rx-ed and got 65# on the shoulder press. As Atmosphere would say,

I am going to go play at 12 with Katy. Yay! Glad to have the workout out of the way and the rest of the day to do whatever I want! Hoooolllllllllllllllllla girl! haha, I just love saying that. Did I say I am going to miss her so much?! Gosh dang her.

So the dried pineapple turned out efffing AMAZING. Seriously so good. SO SO SO SO SO SO good. I'm thinking about making some paleo snack packs. What do you think? Put like dried fruit, jerky, nuts and coconut in them? mmmmm....Give me some feedback. :))

So I made the Chocolate Cakes with the frosting from the Zook Muffins and it is straight up German Chocolate amazingness. HEAVEN! Took them down to the gym to share of course. And took some pictures of course :)) I want this cake on my birthday and I want to eat the whole thing. Put myself in a cake-coma! Ha!

Scott must have read my post yesterday and told me he would eat the spaghetti squash.YAY! He is so sweet to me. I made a huge pot of spaghetti sauce, and it turned out AWESOME, just like my parents. Then baked the spaghetti squash and pigged out. This dinner totally satisfied my craving. I am a happy girl!

I had to show a picture of my little love muffin. This is Oliver. The other man in my life. He snuggled with my all morning. He never snuggles with me unless he knows I am sad or not feeling good. Crazy how smart dogs are.

So if your craving something comforting and delicious make this sketti sauce with either sketti squash OR zook noodles :) We are just about burnt out on zook noodles...

Sketti Sauce

1 lb grass fed ground beef
1 lb mild Italian pork
1 lg can organic no salt added diced tomatoes
2 - 15oz cans of organic no salt added tomato sauce
2 tbsp minced garlic
4 tbsp Italian seasoning
1 yellow onion chopped
1 tsp black pepper
1 tsp salt
1 tsp basil
1 pkg diced mushrooms (yuck, but Scott loves them)

Preheat oven to 325F

In a large saucepan cook both beef and pork with onion and garlic until done, about 8-10 minutes. Add your spices (Italian seasoning, black pepper, salt basil) and mix well. Add your cans of tomato sauce and diced tomatoes and cook on low to medium heat for 30-40 minutes. Let sit to cool and thicken a little bit.

While your sketti sauce is cooking, cut your squash into half and scoop out all the guts. Place face down on a cookie sheet covered in foil or parchment paper and cook for 20-25 minutes. Take out of oven let cool for 5 minutes or so. Take a fork and scrap against the grain to get your "noodles".



Get some noodles in a bowl and then top with this nom nom sauce. I hope you enjoy it as much as I did!

Chicken Pesto Pasta

So I have a few booboos. My hip, my shin, my mouth. I don't know why I am falling apart at the seems. I am only 25 here! But typical Codi ignores everything until its really bad or it goes away. Which in one of these cases screwed me. I knew it would. I know. I already am upset at myself. I had a tooth ache Sunday. It progressively has gotten worse until I couldn't sleep night before last and was crying. THANK GOODNESS that my dentist could see me yesterday to give me stuff to hold me over till next week. I have to get a root canal. UGHH. Sucks big time. I seriously cant think of a time that I have been in more pain then this. It sucks. I couldn't even workout yesterday. I couldn't get off the couch. I didn't want to to laundry, eat (obviously), clean. I didn't even want to frost the mini cakes. So I got my prescription and took a happy pill and then managed to clean up the house made dinner and frosted the cupcakes. I went down to the gym to pawn them off on everyone and took some pictures of everyone getting their wod on.

I am not too upset that I missed this wod. I cant climb a rope, never have been able to in my life. But I haven't tried since I was 10. So maybe I could. I'm going to try it. Anyways, it was rope climbs and OH squats. You guys killed it! Way to go! I can't wait to be back at it today. 4:30 class watch out!

I am super sad that Katy is leaving next week. I am going to miss her. She is such an awesome coach. And such a great person! We are going to be poolside tomorrow. I hope the weather permits.

So I slept awesome last night, Scott tickled my back for a good hour and it put me to sleep while we were watching the Olympics. (surprise!) Woke up in pain, but I am making a surprise for Scott. Well I am sure he knows since we live together. But he's gonna love it. I am making apple chips and drying out some pineapple too! MMMMM....I love pineapple. Its probably my favorite fruit ever. I could eat an entire pineapple in one sitting. Then I would have a sore tongue. That's okay it would be worth it.

I have been craving spaghetti. I love my parents spaghetti. Ahhh man. So good. Homemade sauce at its best at the Pierson residence. I could make some with zook noodles but I have had zook noodles soooo much lately. I really want it with sketti squash, but Scott doesn't love sketti squash so I haven't made it. I just need to make it for lunch, pffft DUH! So for dinner last night we had chicken pesto pasta. It was super yummmmmy! You should try it...:))

Chicken Pesto Pasta

3 cups zook noodles
1 lb chicken
1 1/2 cups fresh basil
1/2 cup olive oil
1 cup pistachios
1/2 avocado
2 tbsp minced garlic
salt & pepper

Fire up the grill and cook chicken. Julienne slice your zooks so you have your noodles. (Julienne slicers are the best invention EVER, well that and a food processor)

Check your chicken, cook till done. We did thigh and they took about 15 minutes. Get your food processor out. Combine basil, EVOO, pistachios, avocado, garlic, and salt and pepper until you get a nice creamy consistency. MMM it smells amazing.



In a large saucepan heat up a little EVOO and toss your zook noodles in there. Dice up your cooked chicken and put in with noodles. Lastly add your sauce and incorporate that throughout the noodles and chicken. Cook for a total of about 5 minutes. CONSUME. This is delicious. Trust me.

Chocolate Coconut Cloud Cake


I AM NOT KIDDING WHEN I SAY THIS....yes I am yelling at you guys. This cake is soooooooooooooo cakey! Nice and fluffy and delicious. I was bored last night and frankly kinda moody. Then I decided I wanted to bake a cake! So I did! And it is delicious. I made mini cakes and cupcakes so that I could easily share them with my CrossfitGP family.

So I forgot to tell you guys that on Sunday at my friends pool I got bored laying there roasting in the sun and spotted an old school beaded jump rope. So I walked my happy ass over grabbed it and started doing some single unders. I was trying to practice my double unders because I suck at remembering to practice. And GUESS WHAT...I got 1. Just 1. Out of like 150 I got one. But hey, you gotta start somewhere right?! So now I need to do it more. Duh. Amanda and myself are doing a pull up challenge until we can do a pull up. If that makes sense. So I do them with the blue band, she did one with the red band. That girl, she's almost got it. So everyday we are at the gym we are going to do pull ups with those bands until failure. Then once I can do 5 with the blue I will try one with the red. Once she can do 5 with the red she is going to try 1 with the skinny purple. So we have a ways to go. But we are determined to do a damn pull up!!! Yeah buddy!!

I really just want to be relaxing by a pool today. Maybe take a little slumber. I dunno. But I can't. Not enough time. Maybe tomorrow!

So once again we stayed up till midnight watching the Olympics. Man! They are awesome. Those sprinters! BA. I was watching their form. Since I am learning all the right things I was checking them out making sure they had it right. Who am I kidding. Of course they have it right. They are straight up animals on that track. And those little gymnasts! Whew! triple fifty spins and flips. Awesome. I find myself getting all into it and when they step out of bounds I get all tense and curse sometimes. Its funny.

I don't feel good today. On multiple levels and reasons. I hope I feel better later, cause this sucks. That's my whine. Thanks!

So here's the cake recipe, its so amazing. I made it with a coconut frosting, I'm gonna call it coconut cloud frosting, but it would be very tasty with the frosting from the zook muffins as well. That would make it german chocolate style. Which is my favorite. YUM!

Chocolate Cake

1 cup coconut flour
3/4 cup cacao powder
3/4 tsp baking soda
3/4 tsp salt
9 eggs
3/4 cup coconut oil
1 cup pure maple syrup
3/4 cup brewed coffee
1 1/2 tablespoons pure vanilla extract

This stuff smells like heavenly brownies

Preheat your oven to 350F. Grease your pans (two 9" pans is what the recipe fits).
Combine all dry ingredients in a small bowl. In a large mixing bowl whisk together eggs, oil, syrup, coffee and vanilla. Slowly add dry ingredients until you get a nice smooth batter. Divide the batter into two pans and pop in the oven for about 25 minutes or until a toothpick comes out clean. Allow to cool on wire rack before removing from pan.


Let the cakes cool COMPLETELY before frosting.

Coconut Cloud Frosting

1 cup coconut butter
3/4 cup coconut milk (canned, full fat)
1/3 cup raw honey
1/2 tsp vanilla
1 cup shredded coconut flakes

Combine all ingredients in a bowl and mix until you get a fluffy frosting. Once cakes are completely cooled, frost away! You could layer this cake however you'd like. I did little ones and layered twice. Eat them, you'll love it.

Blackberry Chops

I have the weirdest hair ever. The top half of my head is normal to fine-ish the bottom half is straight up Brillo pad. Like ringlets that are African American texture. Its so weird. I don't know why are who or how the heck I got this. My family has normal hair. Got me beat. Don't put me in any sort of humidity or POOF! Not that I really care. I can just pull it back and throw on a headband. I'm pretty good at doing that. I'm definitely not one of those girls that's like "ahhh, my hair is blowing around, roll up the windows!" I am a windows down wind in my hair kinda gal. And music. Loud. Yep. Loving the song Awolnation - Sail, it's awesome. I just replay it over and over again. Never gets old, it's a great summer song! So we have the next 4 weeks at the gym to work on our gymnastics. Oh yeah...This should be good. Hopefully I will grow in this department :) I suck at this kind of stuff. I am scared to be upside down. I have never in my life been able to do a cartwheel either. Dangit. I know, that's redic. Every time I tell someone that they look at me in sheer disgust. I'm SORRY. Yesterday we did pull ups. EMOM for 15 min. I graduated to the blue band. It was hard, but I did it. And today my my elbow-pits are freaking sore. Then we did a 21-15-9 of power cleans and box jumps. I pushed myself to do the cleans at 75# cause Jason said they should be heavy. Oh don't worry Jason, they were heavy. I cant believe the rx was 135/115#. That's insane. One of my reps in the set of 21 I shrugged it up and didn't get under it (suprise surprise) and it was like slow motion setting it back down. Kinda funny. No? Guess you had to be there! ha. Any who, finished the wod in 7:20 at 75# and 20" box jumps. Scott and Mike KILLED it rxed. I wasn't sure if Scott was going to make it off the ground afterwards. Had me a little worried. :)) Such a stud he is.

I met Annie at the track this morning for our endurance homework. We both had the same drills to work on so we figured, why not do them together?! My leg still hurts. I am icing it as we speak. Good job me!

I had zucchini soup for breakfast again today. But this time I fried up 3 pieces of bacon and chopped them up and put them in my soup. YUM! Just as I had suspected, it was delicious!! I am trying to think of what sort of dessert I am going to make this week. HMMM.... Any ideas? Any cravings? I'm thinking something chocolaty. I absolutely LOVE it when our friend Mike goes out of town because I get huge bags of fresh veggies. I mean we miss you Mike, but I love the fresh produce. :)) Last night he dropped by some zooks, green & purple beans, onions, peppers and something else, I haven't checked it out yet. Thanks again Mike!


I got a coupon for $10 off your purchase at Victoria Secret. Maybe that will be on the agenda this weekend...I need to go bra shopping. My strapless bra doesn't fit the less of boobs I don't have anymore. Dangit. Oh well. I am getting muscles in return. And that's good.

K so last night we ate some more of our old friend Wilber. I discovered that I do not like bone-in pork chops. They are a pain in the ass to eat. They sure are tasty though. I made a blackberry glaze to go on these chops, and it was delicious. Fruit and pork just go dandy together. Such a merry little combo. I want to say the word marmalade with this dinner. I don't know why.

Blackberry Chops



12 oz of fresh blackberries
1 cup organic balsamic vinegar
1/2 tsp salt

Combine in small saucepan and cook on low until berries get tender. Mash with fork until berries are broken down and simmer to thicken.

Now turn on your BBQ to medium heat. While your sauce is cooking mix in a small bowl the following ingredients...

1 tsp cinnamon
1 tsp black pepper
1 tsp thyme
1 tsp garlic powder

Rub onto both sides of pork chops and toss those suckers on the grill. Take 1/2 cup of the sauce and use as a glaze to coat the chops with while they cook. Turning every couple minutes, reapply sauce and cook for a total of 12-14 minutes. Not sure if it was just our grill, but we caught some flames. So be careful people.

After they are completely cooked, toss on a plate with whatever side dish you'd like and dig in!

We had sauteed zook and onions and green salad!

Creamy Zucchini Soup

What an awesome weekend! Hope everyone had a great weekend! Seems like all summer we have been go go go go go! It's already August? WTH. I always see people post on instagram and the FB writing "SMH"...I never knew what it meant until recently. "shakin my head". Kinda funny.

So I'll give you a run down on the events from my weekend, Friday night we went to the 5:30 cf class. It was test day for snatch and clean & jerk lifts. I pr-ed on both! BOOOOYAH! 62# snatch and 92# clean & jerk. The snatch is like seriously the hardest lift of my life. Gotta work on that one. I set myself some long distance goals. So that's good. Let's say a year from now I want to reach them. That seems reasonable-ish. We shall see! So Friday night we went and watched the new Batman. That movie was seriously so long. 2 hr 45 min. Really? Is that even necessary? You know how people get RLS (restless leg syndrome)? Well I get it, I haven't been diagnosed but I swear I have it. I switched sitting positions probably 50 times in the theater. Ughhhhh, I almost had a minnie freak out. Note to self - don't go see movies longer then 2 hrs.

Saturday morning was so fun! It was team wod Saturday. Scott's guess was right on the wod. SO CRAZY.

Intense right? Well needless to say after the workout I was covered in sandbag remnants and sweating from head to toe. I needed to be hosed down! That running with the sandbag was far from awesome for my leg issue. My team rocked it at over 5 rounds. That means a mile with 20# on my shoulder. Everyone did so awesome. I love it when we get to work as a team and cheer each other on. I made Cinny Buns again. I PR-ed on that shit too. PR-ing all day every day. hahaha! I whipped those out right before class. So everyone got to eat them fresh out of the oven. BOOM! So after relaxing from that for a bit I got ready and went to Medford with my bestie. She had to return a few things at the mall then we went to dinner at Habeneros. That place has good mexican food. And margaritas. Usually they use fresh fruit in them. Phi got a fresh fruit strawberry one. YUM! I didn't drink. Ate pretty paleo too! I had the Baja Chicken Salad, minus the flour shell and minus the cheese and dressing and tadaaaaa its paleo. Yum!

Scott was already in Glendale, so after Medford I made my journey north for Vernon's birthday. The village was a interesting place. Definitely felt like i was in a men's locker room. They don't have A/C in there. Yuck. It was so sticky and stinky and gross. It was 108F on Saturday. Imagine that. Thank goodness they had an outside area with pea gravel and oddly manufactured picnic tables. It was fun though. I had a couple drinks. Tequila and soda water with a million limes. Yum! No fights broke out while we were there so that's good. We left about 11. We are such old people.

Sunday ended up being awesome. Made a failed breakfast with my man, and then cleaned the house for a couple hours.

Apphia came over and we suited up for a pool day! YAY! Headed over to our friends house and lounged by his pool for a couple hours. SO NICE! Then we went down to the river and swam for a bit. I think I got a little sun. I hope. I was loosing my tan.


Yay! We made a delicious dinner (duh, what else would you expect...haha just kidding) and Phi and Stu ate with us. Then I made a dessert that was like Thanksgiving. (Inspired from my friend Amy :)) Yum. We all went for a long bike ride too! Active rest day eh?! Heck yes, it was raining on us cause it was a storm outside. But so much fun! I LOVE the smell of rain on hot asphalt. Its the best.

Great weekend right?! I loved it. :) Cram packed with all our best friends and good times!

So I know it's summer and I know it's hot outside. But I made this soup with some of that ginormous zucchini. It was so good. I probably could have ate the whole pot. I didn't put any meat in it, but I have a feeling some crunched up bacon, or some shredded chicken would be great.

Creamy Zucchini Soup

3 cups shredded zucchini
1 1/2 cups shredded carrots
1 yellow onion diced
1 sweet potato diced
1 cup canned coconut milk
2 cups organic chicken broth
2 tbsp garlic
1 tsp black pepper
2 tsp garlic powder
2 tsp onion powder
2 tbsp nutritional yeast
1 tbsp basil
1 tsp oregano
1 tsp thyme
1 tbsp EVOO
salt & pepper to taste

In a large pot heat your EVOO to medium heat. Add your garlic onion and sweet potato and saute until onions are translucent. Don't burn the garlic! Add your chicken broth, coconut milk and spices. Bring to a low boil for 10 minutes stirring occasionally. Add your shredded zook and carrots and incorporate all ingredients until a delicious witches brew has been created. You may want to add more salt & pepper to taste. I did because I love pepper. Let simmer for 15 minutes and serve!

Bison Burgers with Grilled Onions

Last night we were sitting on the couch, and I was explaining to Scott how this laptop makes my life difficult every time I write a post. I'm going into detail about how when my hand touches the sensor when I type it will delete entire paragraphs and I panic. I am telling you guys this because the look on his face was priceless and makes me laugh just thinking about it. He was slightly concerned but almost a look of "is this a real thing?". Haha. I bet that he never knows whats gonna be next with me. It's good, I gotta keep him on his toes :))
If I was weighed on a weird-o-meter scale I'd be pretty weird.

Yesterday at our box was AWESOME. We worked on snatch balance, on my last set I finally felt good. It felt reeeeaalll good. Annie brought her husband, his name is also Scott. He's about a foot taller then my Scott. He's injured at the moment so he came down to stretch and I signed him up as the photoman. He got some good shots of everyone! Thanks Scott!! Check it out... The wod was super fun too! It was 3 rounds for time, 10 thrusters (95/65), 20 double unders, 30 situps. I started the workout rx-ed then on the 6th thruster in the second round had to drop to 55#. My time was 7:07 or 7:08. YAY! I still can't do double unders and my calves are tight today from doing single unders instead. I NEED TO PRACTICE DANGIT! I am seriously so so so excited for the wod tomorrow. Scott and I think it might have something to do with that Hero wod that he saw somewhere. Maybe not. Who knows. But I do know it's gonna be stupid hard and stupid fun. Is it ridiculous that I look forward to the Saturday wods all week long? Nah. Its awesome. Whats everyone doing this weekend? Katy is going to hike Mt. McLaughlin, which I totally want to go but don't want to miss Saturdays wod. I wish she was going Sunday. Booo. :( We are dog watching for our good friends that are going to that country music jamboree thing. I'm gonna be honest, I dislike country music. A lot. Like it almost annoys me. But I would have gone for the awesome camping/fun/friends experience. It's also our other friends birthday, so we are going out in the big Glendale to celebrate Saturday. I guess we are going to some bar called the Village. I am a little apprehensive to this because they always talk about this place and how everyone gets in fights and there aren't any cops and blah de blah. Yikes. I'll let you know how it ends up. Hopefully I will get some photos to share with you people.

So I made these bison burgers the other night, it was the night that I got attacked by the killer bee. I absolutely LOVE grilled onions. Probably one of my favorite things ever. Its like candy. Yum.

Bison Burgers

1 lb ground bison
1 bell pepper
1/2 red onion
1/2 jalapeno (take the seeds out)
1 tbsp minced garlic
1 tbsp coconut flour
1 egg
salt and pepper
I put a dash of sage, parsley and oregano in there too
1 tbsp coconut oil for frying burgers

In your food processor mince the pepper and onion. Drain excess water and put in a bowl with bison, garlic, flour, egg and salt & pepper. Get your paws out and mash mix and blend that stuff together.


Form your patties about the size of your palm and place on a plate. In a frying pan put your coconut oil at medium heat. Add your burgers and fry for 3-5 minutes per side until done.

Grilled onions

1 red onion sliced
1 sweet onion sliced
1 tbsp minced garlic
1 tbsp olive oil
1 sprig of fresh rosemary
salt & pepper to taste

In a smaller frying pan heat up oil and toss your onions, garlic and spices in there. Cook until onions are caramelized and soft. Nom nom!

tomatoes
dijon mustard

lemon cucumbers
avacado

 Assemble your burger per your taste buds and enjoy!
